That sounds good Derek, but too many carbs in the onion soup mix for me. I am going to try to find another recipe for it with less carbs. I remember when this was all the rage when I was in Jr High. It's all my mother ate for weeks, and she was one cranky bitch HHH
Okay, I have been slacking lately so I am going to start posting here again to keep myself accountable.
Dinner last night was shrimp arrabbiata over zoodles.
Tonight dinner was rotisserie chicken with low carb cheesy cauliflower spinach bake. https://mariasmixingbowl.com/llow-ca...o-gluten-free/. I used Havarti cheese instead the monterey jack or mozzarella that was recommended, and it seemed perfect. It was very tasty and not as heavy as some of the casseroles I make.
The only bad thing about making the soup is that I need to air out the house now I can smell myself when walking around today at doing work do to cooking the cabbage in the house
Now I know what I smell when I went to all those Middle Eastern houses when I used to do Residential computer work more often
Spent the afternoon cooking. I had a whole turkey breast I cooked and hadn’t used, and 3 pounds of ground beef to use up. Looks like a comfort food kind of weekend coming.

Macadamia meatloaf.
We had the meatloaf for dinner. Picture is ugly, but it was delicious! Will definitely make it again. Here's the recipe.
MACADAMIA MEATLOAF
(8 Servings)
INGREDIENTS:
Veggies:
2 oz. Mushroom
1 oz. Cauliflower
1 oz. Chopped Onion
Meat:
1 lb. 80% Ground Beef
1 TBSP seasoning (no sugar)
˝ tsp. Pink Sea Salt
˝ tsp. Pepper
4 oz. Cheddar Cheese, cubed, (no carb)
Batter:
3 oz. Macadamia Nuts
2 Large Eggs
3 oz. Carb Free Ketchup
DIRECTIONS:
1. “Rice” the mushrooms, cauliflower, and onion in food processor.
2. Blend the macadamia nuts, eggs, and carb free ketchup into a batter.
3. Mix together with the ground beef, cheese, and seasoning
4. Bake at 350° in an 8X4 loaf pan for 45 minutes.
5. Alternately, bake for 30 minutes. Grate the cheddar cheese and sprinkle on top.
6. Bake for 15 more minutes or until cheese is slightly browned.
1 Serving (⅛ of loaf)

Fat: 25.6g (77%)
Protein: 15.2g (20%)
Carbs: 2.3g (3%)
(Fiber: 1.0g)

I got adventurous today and made Keto donuts. The icing was too sweet for me, but we loved the donuts themselves. I’ll try a chocolate ganache topping next time.
