I had leftover sausage sandwich sauce in the freezer. Think Italian, onions and peppers. So I made the stuffed sausages, I still put Bill's in a roll topped with more cheese and finished by baking but mine I am eating without the roll, with fresh green beans. Thanks for the idea. Thank God there are no scales in San Antonio HHH. Only been here two days and I feel the damage already. I only Wish I could drop pounds as fast as Derek once I get home!

this is an awesome keto corn dog recipe. I didn't use the sticks and just divided the dough in to 8 pieces and wrapped around the hot dog with wet or floured hands

I'm officially down 31 lbs (5 months ) ....Damn this Keto diet is awesome even for an older slower loser like me!!! I've been looking at all the great food porn (especially the keto desserts) on here but really just keep it simple as far as my cooking (meat & veggies & nuts), when I lose more I will venture more into other deliciousness as some of those dishes look so good! Keto On!!!!

I am SO going to try that! I actually have everything on hand (except corn) so I may make it today. I have a ton of dill trying to overtake my herb garden thingy, so it's perfect! It looks divine!

Fantastic work Chrissy! I think it's extra hard to lose in the winter here, because it is so hard to stay active. You will have even more fun with this diet when all your fresh veggies are rolling in!

It’s really good I think I used cilantro because I didn’t have dill but it was very easy, yummy and filling

Thanks Laurie & Chris! And yes Chris looking forward to my homegrown stuff...and even though tomatoes are on the moderate list, I live on heirloom tomatoes for a couple of months once they start rolling in. I would never give them up. LOL

We got to try out the new smoker today. A bunch of wings to throw in the freezer and then we spatchcocked and brined a couple of chickens. We should have put the wings on the bottom so they wouldn’t have dripped on the chickens lol.

Verdict on the new smoker...takes a while to come to temperature but so easy...just set it and forget it.

Damn, I have been avoiding this thread. Too much travel combined with too many calories has really slowed the progress. My cheats are still few but I’ve only lost about 7 pounds since Thanksgiving so it’s time to kick my ass and get back to meal prepping and logging.

I made chicken avocado salad again this week too, I did tomatoes and cucumbers instead of the corn and used cilantro since I had no dill. I think this salad will definitely be a regular for me. Glad you enjoyed your version too

Well.... inspired by all of you I finally committed to a low carb, no sugar diet. I started two weeks ago on the day after I got back from Vegas. I’m thrilled to report I’ve already lost 13 pounds!! I’m amazed. I’m eating about 60%/40% fats to protein and hardly any carbs. Elf Jr has been my keto coach. He’s a pro at keto like many of you. I find that I’m not hungry much at all and can easily stay at around 1200 calories per day.

I’m a bit concerned about my upcoming Vegas trip. I’m reasonably certain I can find satisfying keto food at most meals. (I think I’ll be able to resist those mini bar Pringles that I love.) My question - My MB host always sends me a delicious fruit platter that really enjoy. How bad is fruit on a keto diet? If I eat fruit for the 3 days I’m at MB will it really screw things up keto wise?

Wow great work for sure it is really crazy to see how fast the scale drops in the first couple of weeks stay on it and you will be amazed at the losses


The fruit will be a little bit of a hinderance but don't go overboard and you will see temporary gains a little bit but as long as you get back on track once you go back home to the keto you should be okay.

Gotta live a little too ;)

Great to see you take the plunge Elf70! You have had a great start! I know how much you love your desserts, so giving those up is true commitment :smile-new:

The really hard part about Vegas (and any travel) for me is the places they sneak in sugars where they don't belong. But, I always just do the best I can with a few little splurges here and there. I think it helps to plan ahead, and you usually plan some of your meals ahead so that should be really helpful.

The one thing I will caution you about the fruit is that it has way more carbs than seems fair. Depending on what it is, it could throw you out of ketosis pretty quickly, and then the hungry horrors will show up. Once those take over, it is really hard to stay on track. But, it is also so damn healthy and good that it might be worth it to you. It's always a dilemma for me.

I bet you are feeling better since starting, too. That was one of the things that made this an easy choice to me. Getting rid of the toxins and inflammation makes a world of difference. On previous weight loss attempts, I always ended up hungry, cranky, weak and miserable, but on Keto I started to feel better in a very short time. That makes all the difference and is the main reason I keep plodding along.

I'm really looking forward to seeing you!

Thanks Cris for the encouragement. You’re right I feel much better. Add in the no smoking and I’m as healthy as shit! I’m amazed by my lack of hunger. I practically have to force myself to eat.

My concern going forward is that I’m not a cook. I’m already pretty sick of meat and veggies mostly because I keep cooking them the same way. Yesterday I bought many flavors of sugar free salad dressings and some salsas and am going to try mixing those in with veggies and meat trying to add some flavors. One day at a time.... I’m learning as I go.

I know you use zoodles. Is there a way to cook them that doesn’t turn them into a soggy mess?

First off, the frozen ones are shit. I just use fresh, and I usually just heat them up in a skillet or even in the microwave, and then put them in a colander and drain them. Then I squeeze them a bit and blot with a paper towel if they still seem too wet. Mainly, I just take the chill off them and pretend they are al dente pasta. Mine are always still a bit wet and leave a little puddle, but I eat them anyway. They taste good to me.

I am a shitty cook, but I am getting lots of practice. I am having trouble with my diverticulosis right now, so I have had to cut out all my fresh greens and most cheese. Doing this without salad has been a bitch, and I am a little worried about what to do in Vegas since salads have been my go to for lunches there. I may bring some avocados with me, so at least I can get some healthy fats. It's going to be a challenge!

It is a constant learning curve, and what works for one person doesn't necessarily work for another. But you will find what works for you, and you will have your go to meals. But keep experimenting because you might be surprised how good some things are that you never thought you would like.

I made awesome chicken tenders last night. Threw some pork rinds in the food processor, and then mixed them with parmesan cheese and spices. Dipped the chicken in an egg wash and then the pork rind blend. I cooked them in the air fryer, and they were crispy and delicious. They would be good in the oven or sautéed in a skillet. Wicked simple and they taste like regular food haha.

Thanks Cris for the encouragement. You’re right I feel much better. Add in the no smoking and I’m as healthy as shit! I’m amazed by my lack of hunger. I practically have to force myself to eat.

My concern going forward is that I’m not a cook. I’m already pretty sick of meat and veggies mostly because I keep cooking them the same way. Yesterday I bought many flavors of sugar free salad dressings and some salsas and am going to try mixing those in with veggies and meat trying to add some flavors. One day at a time.... I’m learning as I go.

I know you use zoodles. Is there a way to cook them that doesn’t turn them into a soggy mess?

I prefer spaghetti squash over zoodles. Top it with parmesan cheese. Use butter in cooking to add some fats and salt for electrolytes needed on keto. Sounds like EJ is a great help. You are lucky to have him. I find a lot of recipes on YouTube and Pinterest.

Penguin, one thing that is high recommended is to use Himalayan Pink salt liberally. I have also heard that pickle juice helps. Personally, I can't do pickles, so I will drink Powerade Zero when I start feeling like that. Especially on a gambling trip when I know I will be drinking too much. It can be difficult to get in all your electrolytes, and some folks do take supplements.

But be careful. You might want to talk to your doctor about it as there can be many causes.

I like spaghetti squash with certain things, but it has a more distinct flavor than the almost flavorless Zoodles, so I don't really like it with tomato sauce. Also, it has about twice the net carbs of Zoodles, so I try to use it sparingly. But it is delicious as a side dish with parmesan, like Laurie mentioned.

You can split a good sized zucchini the long way and stuff it with a ground meat mixture and bake it, then top with cheese. Yum. You can do the same with spaghetti squash, but par cook the squash first.

Nothing to do with the zoodle topic, but -- if you like eggplant, you can adapt an old Julia Child recipe -- cube and season the eggplant, saute in olive oil, then just before serving sprinkle with ground pork rinds (instead of bread crumbs) mixed with your choice of herbs and lemon zest.

Definitely take lots of electrolytes...they really help! I take a drink of
himalayan salt, pure synergy radiance C, and cream of tartar twice a day and I also take Magnesium L- Threonate. I will have a sip of dill pickle juice and some mustard on something throughout the day. No keto flu, no headaches. Also I take biotin I use to take Vital Proteins Collagen Pweptides for a few months. Now it's just biotin and I do bone broth when I make it. Taking supplements really helped so much. Can anyone advise me: I like to eat 1/2 or 1/4 avocado each morning. I tightly wrap the remaining avocado in plastic wrap and store it in the fridge. By the next morning it’s completely brown. I scrap off the brown parts and eat it anyway. Is there a way to store avocado without it getting all brown? Is it bad to eat it if it’s brown?

I made guac last night and the top of it turned a little darker green but looked fine once I mixed it up with the still bright green underneath. I used fresh lime juice on the guac and someone told me to put the pit in with it to help it not turn as quickly. Laurie and Chris are big avocado fans so they will probably have some ideas.

Cathy uses lime juice and leaves the pit in the avocado. Just slight brown on surface. Tight wrap in plastic wrap.

Hehehe- no regrets- I'd do it again!!! BUT...just have to learn to go back hard when I get home. The trips away are the hardest because like you, I know carbs will be involved. I'm cutting nuts, dairy, and alcohol (well we will see about that one. LOL**Edit- fuck...I failed already on that one**). Good that you are staying the same, that's going in right direction. :)

So when we were at our son's house our DIL made some delicious steamed artichokes in her Instant Pot. It finally made me order one. As I have mentioned before I have cooked with a pressure cooker since I was a young girl. I'm use to them. But I really did like the automation of the Instant Pot. I made a delicious pork roast. It was very easy to cook the roast then re-open and add the vege's, then re-set and walk away. It has a nice Sauteing/Searing feature. I didn't have to hear the hissing of the regulator and I didn't have to worry about adjusting the flame. So first meal was very good and a bit easier than using my pressure cooker. If it cooks the rice like my rice cooker does (have had one since the 70's) I think I can pack up 2 pots and have room for just the 1!

Well as soon as you said brown sugar I knew it wasn't keto, hhh. Sure looks good but I'm back to the program after a 30 day hiatus. I conveniently carried over my bad ways 2 weeks after returning from KC and the scale is screaming at me to get cracking again!

I made one of mine with sliced extra sharp deli cheddar and the other with shredded Mexican cheese. They were both good and pretty similar but an even milder cheese would be really good for making sweeter ones. When I get home I am planning to go Chaffle crazy!

I’m going to try again with a milder cheese and I think we’ll like them better. I also want to get some corn extract and try doing a corn dog Chaffle.

I have also done them by laying down one thin slice of cheese, then half a beaten egg, and topped with a second slice of cheese.

For the chicken and chaffles, I just added some Bell's seasoning to the egg mixture.

The chocolate one was a little different, and I will go back and link the recipe to that one in the post.

I joined a group on Facebook - Keto ChaffleHouse - and they have tons of suggestions and recipes (amidst a lot of nonsense).

From now on I will post the recipes. I was thinking people were not interested.

I use that little mini-Dash one, which is non-stick. Plus the cheese releases some oil which helps with that. I haven't had any issues with anything sticking so far, as long as I am patient and wait long enough for it to crisp up. If your waffle maker isn't non stick, then I would grease it I think. But definitely don't use PAM or those sprays on a non-stick surface as it will eventually ruin the finish. My only issue is that I sometimes overfill, and then it spills over and gets a little messy.

Last night I made 4 of them and put 2 in the fridge. This morning I threw those in the Air Fryer on the Toaster setting. While they were toasting I fried up an egg, sizzled some ham and topped with cheese. Voila, easy breakfast!

Made my favorite turkey tenderloins for dinner. They were delicious! I also attempted make a cauliflower hash brown chaffle in my Belgian waffle maker. It was a complete fail! BUT......I still tasted it and decided that with a little tweaking it will make a great stuffing when the holidays roll around.

Chrissy, I count carbs rather than calories for the most part. I usually eat 2-3 meals a day and sometimes a snack. 2 basic chaffles are one egg and 1/3-1/2 cup of cheese. Less than one Carb in an egg and depending on the cheese 0-3 carbs. So my chaffles are 1-2 carbs apiece, or 2-4 when I make a sandwich (plus the sandwich ingredients). Honestly, my biggest problem with carbs is tomatoes!! I fucking love them.

So my usual day of eating is either a chaffle egg sandwich or eggs, meat and avocado for breakfast, a big ass salad for lunch and meat and a veggie or 2 for dinner. A snack might be a scoop of rebel ice cream or some berries or some nuts. I drink coffee, water and a Powerade zero throughout the day. (Of course, this is all when I am behaving HHH) I would guess that my calories run form 1000-1600 on a normal day. I will say that I have been pretty much stalled for 9 months now, but when I gain like after a trip to AC (OUCH) I lose it all within a few days. My damn body has settled in here and doesn't want to give up any more fat!! I need to do a fast, but I just haven't been able to force myself to do that yet.

It does take on some of the cheese flavor, which is why I have been using mild cheese for most of them. It mostly provides the texture and crunch.

For the cornbread chaffle I (think) I used shredded mild cheddar, 1 egg and I found a cornbread flavoring at Amazon. I only used 3 or drops, but next time I would use at least twice that much. Finally got around to my 1st attempt at a chaffle. I used a regular waffle maker, it was kind of a shit show while they were cooking, with one side sticking but I peeled it off and laid them back in the well to finish cooking. I used swiss (except for one when I realized I was one slice shy as I was in the middle of putting them in). Used 1 swiss and one pepper jack. I have to say I can definitely taste the swiss (which is a good thing). Not the prettiest but they taste good and feels good to have something to substitute for bread in my hands.

Was supposed to be a BLT, but then I realized I had no lettuce. Also realized that no one tells me when they use the last of the mayo[emoji34] so had to improvise and use ranch dressing. I have read that people use the big ones, double the recipe and then cut them in quarters. (Especially the round one with the dividers???) You can store them in the fridge overnight (or probably longer) and then pop them in the oven/airfryer/toaster to crisp them back up.

The milder cheese is better IMO. I definitely taste cheese when I use any sharp cheddar, but mozzarella isn't as noticeable. You can also use cream cheese, although I have only done that for the sweet one so far. Honestly, if I wanted it to taste like a waffle, I would likely use a regular keto waffle recipe. I mainly use them as a bread substitute to get that sandwich vibe.

These were tasty, but I will make a couple of changes to the recipe next time. First, I will add a tad more sweetener to the batter. And I would shit can the frosting part for a simple glaze, as it was almost like a cheesecake flavor and consistency so sort of overwhelmed the cinnamon. But still a treat!

I had some Mexican chorizo that we picked up from a little mexican market that we didn't even know existed. I wasn't sure what to do with it, but I settled on a Keto version of Arroz con Pollo. I wish I had chicken thighs instead of boneless breasts, but it was still really yummy! I had some Mexican chorizo that we picked up from a little mexican market that we didn't even know existed. I wasn't sure what to do with it, but I settled on a Keto version of Arroz con Pollo. I wish I had chicken thighs instead of boneless breasts, but it was still really yummy! Chaffle of the Day - Pepperoni Pizza Sticks

Chaffles - 1 egg, 1 tbl mayo, 1 tbl almond flour, pinch of baking powder, sprinkle of italian seasonings of your choice.
Put one layer of egg mixture, add mozzarella, add layer of pepperoni, another layer of egg mixture. Beware of overfilling!!
Cook until almost crispy and then cool a bit on a rack.
Serve with a side of marinara.

Wonder bread chaffle (made on the Dash griddle) with Strawberry Jam

Strawberry chia seed jam

8 ounces fresh strawberries
1/4 cup powdered swerve
2 tablespoons chia seeds
1/4 cup water

Cut the strawberries in pieces and start to cook in a pan over medium heat.
Add the powdered sweetener and mix it up.
After 5-8 minutes (once they have started to release liquid, mash the strawberries right in the pan
Boil this for 7 minutes or so. It should be thickened slightly.
Add the water and chia seeds and mix it together. Cook it for a couple minutes longer.

Cool for at least 15 minutes. Eat it up!

This one is extremely popular on all my chaffle groups (don’t judge me HHH) but it was not my favorite. I used the griddle
Instead of the waffler so that may have made a difference? Anyway, here is the recipe. Let me know what you think.

1 egg
1 tbl almond flour
1 tbl mayo
1/8 tsp baking powder
1 tsp water.

Mix it all together. Pour 1/4 cup into the mini. Cook until it is very firm.

I was amazed as well as Steve and my mother at how good the chaffle was....tasted like a real waffle and cooked perfectly. I found this chaffle cheat sheet for all kinds, and looks like a good base to help with most flavors your trying for. However I didn't follow recipe perfectly...because for some reason I have a hard time doing that. I used 4 eggs, 1 cup shredded mozz cheese, about 2 oz softened cream cheese, 1 tsp. vanilla, 4 Tbs. almond flour, 1 Tbs. coconut flour, 1 tsp. baking powder, 1/2 tsp. baking soda. It made 3 large in my waffle maker. I wanna make an Italian garlicy one and put meatballs on it. I have to say...I'm surprised how EASY and fast they were to make. I am so happy that some of you are finding this section of the forum useful! Sometimes I feel like a crazy woman posting all this weird food, so thank you for posting your concoctions, too! Yep, chaffles are weird and so am I!
Blase, I bought the Ninja spiralizer and it is great but now I rarely bother with it and I spent too much money. I have become lazy and now I usually buy them already zoodled. Sometimes I just use my food processor which has a shredding disc. They come out short, but being lazy, I don' really care! There are manual ones, but I don't know anything about them. I am glad you like the Wonder bread ones! I am going to try a slightly different version of them next time.

2 eggs, 2 tbl cream cheese, 1/4 tsp baking powder, 2 tsp water, 4 tbl almond flour

Sounds like it makes twice as much....

I know what you mean about improvising on recipes. Sometimes its because I don't have all the ingredients, and sometimes it's because I think my way will taste better.

People are doing all kinds of things with them. Like putting leftover shredded chicken and poultry seasoning in them, or tuna, or other leftovers. I haven't been that creative yet, ut it's coming!!

Boring chaffles yesterday and today. Yesterday I made them onto plain old waffles. I forget what I used, but I think it was a little shredded mozzarella, a little almond flour, a dash of baking powder, some egg white (from a carton) and a few drops of french toast flavoring. Very tasty with a side of bacon and some sugar free syrup and a little more buttah than was necessary :biggrin-new: Mmmm.

This morning another breakfast sandwich. Made this one with ultra thin sliced deli mozzarella, a little almond flour, tiny dash of baking powder and an egg. I cooked the egg on the dash mini-griddle, and it made it the perfect size for the chaffles. A sausage patty and a wicked thin slice of muenster. Very good.

I don't even follow recipes for the basics now. Any combination of egg and cheese works, a little almond flour and baking powder makes them a little more fluffy but the flour adds calories and a little bit of carbs.

Peanut butter and strawberry chia Jam on wonder bread Chaffles.

Used this wonder bread recipe in my griddle.
2 egg whites
2 tbl cream cheese
1/4 tsp baking powder
2 tsp water
4 tbl almond flour.

I definitely like these better than the other wonder bread recipe.

I’ve been away from the forum for a while and I’m just catching up on this thread. The chaffles look so great and seem to be so popular everywhere! But how do they not taste eggy? I guess like pancakes don’t ? The wonder bread one looks so good! I’m trying to gather all the basic recipes while I wait for my mini Waffle maker to come in.

I just had my first meal from a place nearby called Low Carb Kitchen. It’s $55 for 7 meals and I figure I easily spend that much on fast food per week, so why not.

The meal was sloppy joe Chaffles with cauliflower tots. So yummy! Tonight at work I’ll have pork fried “rice.” The only thing is the portions seem kinda small, so I’ll see how hungry I am throughout the day.

They also have a dessert/breakfast case with lots of goodies that you can pick out a la carte. I got a French silk parfait, a pumpkin spice parfait, and a snickerdoodle cupcake!

They are also starting a contest tomorrow where the customer who loses the highest weight % will get 8 weeks of free meals! So I have to go back tomorrow to weigh in. Wish me luck!

I had the French silk parfait today Laurie, and it WAS amazing!! I did notice it gave me a bit of a stomachache, so I wonder if the artificial sweetener affected me. I’ll see what happens when I eat the other one tomorrow. [emoji23]

Generally, if you cook them long enough they don't taste eggy. I do find that adding flour makes them more breadlike. The first time I made the original Wonder Bread recipe, mine was a little like a puffy omelet, so I kicked that recipe to the curb. Others have not had that issue with it though, so I might have had premature chaffelation. The toughest thing is nor overfilling the waffle maker!

Oh, also some people recommend using egg whites to reduce the egg taste.

I may have used coconut flour once, on a sweet one? I don't remember. I got the Costco sized almond flour, so it is my go to! I really should do more with coconut flour to understand the textural difference better.

Remember chafflers, because coconut flour is so absorbent, the ratio of coconut flour to almond flour is 1 coconut to 3 almond if you are substituting!

I had the snickerdoodle cupcake when I got home from a movie last night. SO delicious but I had crazy stomach issues for a few hours after (not pain, just rumbling and gas, sorry TMI). And I had a similar reaction after I ate that parfait. I am wondering if it’s the artificial sweeteners? I know she uses Swerve; maybe that’s negatively affecting me.

I had the snickerdoodle cupcake when I got home from a movie last night. SO delicious but I had crazy stomach issues for a few hours after (not pain, just rumbling and gas, sorry TMI). And I had a similar reaction after I ate that parfait. I am wondering if it’s the artificial sweeteners? I know she uses Swerve; maybe that’s negatively affecting me.

Here is my bacon sandwich on a chaffle I made for lunch. Just the basic one - egg and cheese, I haven’t made any other kind of chaffle yet. I don’t find them too eggy but I like all kinds of eggs. Helps to sprinkle a little shredded cheese on the maker before putting the batter on to make it crispy and cool on a rack. Even foamy likes them!

Yeah, that is how I make all of mine, I sprinkle the cheese, then pour the egg, then more cheese. And then cool on a wire rack. They’re definitely crispier that way.

I’ve seen many vids where they mix the cheese in with the egg and pour it all on at once... I haven’t tried it like that yet.

I just ordered the dash mini griddle this morning...excited to get it!

I’ve always mixed everything together...now I’ll have to try it with the cheese separate.

Had a big ass burger on a chaffle tonight. I used mini-griddle for the bottom bun and the mini-waffler for the top. It made for more interesting texture and it was done twice as fast. I added the Italian seasoning again and it was good!

That looks really tasty! Do you have a link to the recipe? Does it call for yeast? I think it's really tough to get anything to rise without using yeast.

I managed to put on 8 pounds in 8 days by eating and drinking anything and everything :culpability: Plus I had 4 leftover from my last adventure, so it is strict, strict, strict for me now. I did manage to shed 2 and a half since I got home Saturday night, so I know I can do it!

I started my day with 2 cappuccinos every morning, and didn't realize (or just didn't think about it) that they were 10 carbs apiece, so I was carbed by 9am HHH! Add in a couple/few frozen drinks, shitty fucking french fries, dinner rolls (worth it haha), and desserts (gelato!!!) and I was doomed! But, since this is a way of life, it is okay to stray sometimes, as long as we get back and keto on!

Squash, peas and rutabaga are a little high in carbs but very nutritious and I fit them in my macros, so they were worth it. We are getting into that comfort food season in these parts!

We also had chicken mushroom Alfredo on spaghetti squash one night but I forgot the picture. It was yummy.

If you are trying to eat low carb and haven’t made an egg loaf you need to! So easy and so good! Only ingredients are cream cheese, butter and eggs. Tastes like French toast I topped with sugar free syrup and raspberries and whipped cream

I only tried one on my first Keto Thanksgiving. It was horrendous and the whole thing went down the garbage.

However, I am in a few Facebook keto chaffle groups, and there are a bunch of recipes with people using chaffles as the base. I also was thinking about trying it with the Keto cornbread as a base. But, we won't be here for Thanksgiving so I won't be trying any of these until closer to Christmas. I have no clue if either of these would be any good, and the fact that most of these have a lot of cheese in the base gives me pause. But with the usual stuffing additions, they could work out well. Sorry I don't have anything definitive.

It's worth a try. The reviews I have read on it are mixed, but to use it as a stuffing base might offset some of those complaints, as I think many folks said it as dry. I guess the Aldi's bread flies off the shelves as soon as they ge it in. But, for what it's worth, those reviews are also mixed.

Cornbread recipe I used, I double the recipe for 9 by 13 pan@ 375 for 35 minutes and made cornbread last night so today I just made the cornbread dressing Recipe for Keto cornbread: 2 cups almond flour
2 tsp of baking powder
1 tsp of sea salt
4 eggs;beaten
1 cup of sour cream
1 stick of melted butter
3 tbsp of sugar substitute
4 tbsp of heavy whipping cream
1 1/2 tbsp sweet corn flavoring
For dressing:
Chop 1/2 cup onion and celery each
Melt 1 1/2 sticks of butter
Sauté onions and celery till translucent
In large bowl crumble cornbread
Mix with cornbread, salt and pepper to taste, 1 1/2 tsp of poultry seasoning the cooled onion and celery mixture , 2 1/2 cans of organic low sodium chicken broth and 1 egg. Combine all ingredients and pour in 9 by 13 pan bake covered for 30 minutes at 375 and uncovered bake additional 30 minutes but watch cause you don’t want it to dry out.

1 1/2 tbsp sweet corn flavoring
For dressing:
Chop 1/2 cup onion and celery each
Melt 1 1/2 sticks of butter
Sauté onions and celery till translucent
In large bowl crumble cornbread
Mix with cornbread, salt and pepper to taste, 1 1/2 tsp of poultry seasoning the cooled onion and celery mixture , 2 1/2 cans of organic low sodium chicken broth and 1 egg. Combine all ingredients and pour in 9 by 13 pan bake covered for 30 minutes at 375 and uncovered bake additional 30 minutes but watch cause you don’t want it to dry out.

Here’s my review of my first attempt at low carb stuffing: 2 thumbs up and i’ll Make it again for sure.

I had made it a week or so ago. Today I slide it in cubes, drizzled some unsalted butter on the cubes and cooked at 350 until the bread dried out...about 20 minutes. Cooled and set aside.

In a pan I browned celery and onions. Added ground pork sausage, salt and pepper and lots of sage and sautéed until cooked. Thoroughly drained the sausage mix and then added the breadcrumbs and some chicken stock. Put dressing in a greased casserole dish, dotted the top of the dressing with butter and cooked uncovered at 350 for about an hour.

The taste was 2 thumbs up. I’ll definitely make low carb stuffing again. Next time I’ll try a bread recipe without cheese because the chicken broth didn’t soak into the stuffing bread like it does normally so the stuffing didn’t bind together like normal. Maybe I’ll add an egg next time to bind everything thing together...either way it still was delicious and I would serve it to non-Keto people. I don’t think they would notice that it was Keto.

Hi jokers!

Steve and I started the Keto diet on Monday. I’m finally done breastfeeding Elliott and it’s about dang time I get back to my pre-kids weight. I turn 40 in March and I don’t want to be “fat at 40,” but wanna be “fit at 40!”


I’m not quite sure if I’m doing it all correctly but we are avoiding all sugar and carbs. I’m reading a lot of blogs and articles and am in a Facebook group but they make it seem so complicated with macros/Mct etc etc. I have no idea what those are [emoji23]

Good luck Steve and Nancy! Laurie and Chris can better answer your questions but remember low sugar and carbs is good but it wont be as successful unless you get protein and fats in there too.

So I decided to experiment with this spaghetti squash recipe because it looked really good. It’s not bad, I would probably try it again.

I modified the recipe slightly. I used regular broccoli instead of broccolini and I added mushrooms because I like mushrooms. I also broiled my veggies instead of sautéing them because that’s how I like my broccoli. I added a little butter to the spaghetti squash too. I seasoned with salt, pepper and garlic powder.

I sounds like you have everything under control! A lot of it is just finding what you like to eat that is Keto friendly, and trying new things. Don't you hate how easy men lose wight? I hope you do shove that donut in his mouth HHH.
