So, one day out of the blue (Oct 21st to be exact) I decided that I was sick of feeling like crap and it was time to do something about it. With very little research or thought, I embarked on a new (to me) low carb way of eating. In hindsite, it was a weird time to do it as 13 days later we were heading out for a 10 night cruise, but I know myself and if I had decided to wait until the right time, it would not have happened. Frank decided to tag along in a modified fashion, and we are off and running. And you know what? I don't hate it!!

I thought it might be fun to talk about it here, as I know I am not the only Joker that is taking steps to lose weight or feel better.

So, is anybody else trying to eat healthy or take better care of themselves? Let's talk! Share recipes, whining, success & failures. Low fat, low carb, low cal, whatever you are doing, share it here and maybe we can become a healthier bunch.

And my first recommendation is this. DO NOT LOOK AT CPT's FOOD PORN! I am sure it is possible to put on weight or possibly have a heart attack just from looking at those carbs & fats :D

Great thread! I️ have really been struggling lately. All my delish desserts have caught up to me and I️ feel like shit. I️ find that low carb diets work very well and very quickly. My problem is that I️ just can’t come up with a variety of foods that help me stay on it. I️ get sick of eggs and meat. I’m not a big veggie eater and sometimes find myself literally gagging when I️ force broccoli down my throat. I️ so want to do low carb but after a week or two I️ end up giving into carbs..... I’d love to hear low carb eating ideas from anyone who has succeeded or is succeeding on a low carb plan.

Good for you, Chris! I know I need to do something. I am not getting any younger either. Life gets busy between work, keeping up a household, now two fur babies, and the frequent drives to Virginia to help my elderly parents. Unfortunately food is my crutch. Maybe not so much the sweets, but not necessarily the best foods. I see what Derek did, and I still am amazed at the change he made and is still maintaining!

Maybe, just maybe more Jokers can help inspire this old, fat, lazy guy in to changing his ways.

Low carb has been successful for me in the past. I have a hard time sticking to it now because I'm not committed to giving up my carbs ... which I gravitate towards in times of stress.

Elf70 do you roast veggies? I think it helps a lot with flavor. Cauliflower and broccoli get crispy if you roast them at high temps. Tomatoes' flavor gets concentrated and they're delicious. Happy to share some recipes if you want.

Roasted vegetables are delicious and taste completely different than steamed, or prepared normally. Do you like cauliflower? I have found it to be the most versatile vegetable possible. Cauliflower rice or cauliflower mash are great comfort foods when paired with something rich and delicious. I even found a recipe for cauliflower pizza crust which I haven't tried yet.

I just google anything (say low carb creamed spinach recipe or low carb desserts) and it is amazing how many ideas you can find. I am actually having fun with it, and the particular version I am doing (Keto) encourages eating fat which certainly helps wth cravings.

You can but the cauliflower rice frozen in the steam fresh bags. Just make sure it doesn't have added ingredients. A serving is only 1 net carb I think, versus over 30 for rice.

We have been doing lower carb for a few weeks now. For us the secret is not to cut out all the carbs. For instance for breakfast we'll have a piece of sourdough toast and couple slices of bacon. Lunch will be soup and apple or meat and apple. Dinner is usually meat and salad. Now we still eat a couple of fresh baked cookies in the late evening and have some chocolate after lunch and dinner. (Chocolate is semi-dark chocolate chips or small Halloween size candy bar.) Eat cheese stick and some croutons in late afternoon. This way we are getting some carbs and not depriving ourselves totally. Have also cut out the nightly glass or two of wine. Try to go out during the week and here we do go off the carb thing a bit but again since we do get some carbs everyday we do not go hog wild when we go out (except for the bottle of wine). This is a long term project not the losing the 3 pounds a week thing. Just want to modify our eating habit not make a drastic change. Averaging about 1 to 1.5 pounds a week in loss. When we started we did track calories for a few days and looks like 1500 to 1600 per day for us.

We still do our one night a week meal of Porterhouse steak and baked potato.

To help things along we (namely Cathy) has started to cook big pots of soups and then freeze single helping servings. She also cooks up a whole roast (beef or pork) and/or turkey breast and then cuts that to serving size and freezes the servings. Did buy a vacuum sealer for freezing as this does drastically improve the texture of the meat after serving. The vacuum sealer and freezing serving size portions has made planning meals really easy and has been key for us on changing our eating habits.

So far we are down about 11 to 12 pounds each and it really has not been hard. We have lost a couple of weeks as we totally go out of control when we hit AC with free drinks. But we have held down the carbs when eating.

I really think the secret on the lo-carb diet is moderation. The 1st stages of Atkins or South Beach is almost zero carbs, but that is really to hook you in to rapid weight loss so you can buy more Atkins stuff. What we have decided will take longer but will stand a better chance of being permanent. Also have to remember to be sensible in serving portions as total calories do add up.
So gang that is our story and we are sticking with it. HHH

I love cauliflowers. I tried the cauliflower pizza crust. It was pretty good but a bit bitter tasting. I’m not a great cook so may have screwed up the recipe. The pizza I made was pretty good when freshly made but pretty bad as leftover. Maybe heating it in a toaster oven instead of microwave would have been better. It was very soggy reheated.

I made keto bread a few weeks ago. It was delish. It was better when very fresh and lasted for about 5 days. I found the recipe using google. If I can figure out how to post the link I will.

For pasta I have been using spaghetti squash or Zoodles. Zoodles are zucchini strips which you can often find already cut in the produce department, or do your own with a mandolin. I love pasta, rice & bread even more than sweets, but these substitute reasonably well.

Spaghetti squash (I didn't blot it enough so it was a little too wet) with meat sauce with onions and peppers & of course, lots of parmesan cheese! You can also make parmesan crisps but shredding some on a cookie sheet, sprinkle with cracked pepper & paprika and bake. Easy peasy.

Got to remember carbs really don't give you the feeling of being full. Oh one other thing we serve our plate in the kitchen and then go to the table. No bowls of second helpings allowed.

I am not there yet to commit to reducing carbs but will look to this thread for inspiration and ideas. Having said that, years ago I did Atkins and it worked extremely well for me.

For roasted cauliflower, I break it down into small pieces so they get brown and crispy. 400 degree oven, heat sheet pan while oven is preheating and I just put some salt and pepper and canola oil on the cauliflower and toss. I flip after 20 minutes and then cook it for another 30 flipping once. You can certainly cook it less though - I just like it dark.

For Brussels sprouts I love making chips with outer leaves and roasting the remaining sprout. Again just salt n pepper and a tiny bit of oil. 400 degree oven and I flip at 10 minutes and cook for 5 more for the chips. You can google in to find more interesting recipes with spices. The chips are addicting.

I also find that chickpea pasta (Banza is the brand) is a good substitute for regular pasta especially with sauce on it. Not low carb but better carbs.

Ha! I️ think it took me longer to figure out how to put my food processor together than it did to make the actual recipe. I️ do remember having to “dry” the cauliflower. I️ spent a great deal of time googling definitions of various cooking terms. But I️ agree - it really looked like I️ knew what I was doing.

Also you guys are real troopers trying to do this through the holidays but if you can hang on through all the holiday gtg the rest of the time dieting will be a cake walk.

For lunch usually had a 2 cups equivalent to vegetables and a protein shake

For supper had 2 cups equivalent vegetables and 4-5 oz lean proteins meat.

I am so addicted to Romaine lettuce leaf "tacos" it's not funny. The only downside for me is that I eat them with lunch meat, which I know is a bad thing, but I literally ate them every day for lunch for probably 2-3 years. I used to put maybe 3/4 tsp of Kraft horseradish sandwich spread on (I guess they took it off the market now), then sliced tomatoes, slivers of red onion, spicy sliced white meat chicken, and one slice of provolone or swiss. Romaine lettuce is filling and the wraps are really satisfying. Cutting out breads for me was key. I try to go easy on other meals, but I do like pasta and rice. I find when we go to restaurants, if I order some sort of sandwich on a bun, I always leave about half the bun behind. It's just too much bread and makes me feel bloated. Also, since I won't be able to sleep if I eat a heavy meal later in the evening, that has helped steer me toward eating lighter as the day goes on.

I myself gave up most processed sugar about 4 months ago and try my best to eat low carb. I'm also meal planning and prepping my lunches and eating a light breakfast everyday, which I never did before. I've lost 25 pounds! Stuck in a rut right now, haven't seen that scale move in about 2 weeks, so I'm thinking about adding fasting a couple of days a week (500 calorie fasts) and try to get 10 more pounds off.

I am using an app on my phone called lose it that is free to track everything I eat. Keeps track of calories, carbs and fats. So far it is working down 9 pounds would be more but when we were in kc for 4 nights I had some things I shouldn’t have and gained some back :(
Thanks Chris for starting this to keep me motivated. I haven’t tried a lot of new recipes yet mainly because I haven’t had time. I made a low carb broccoli cheese soup that was good. I like the frozen cauliflower rice.

This is a good thread. May motivate me to finally start some yoga. Getting too stiff and keeping up with grandbabies is a must around here, and the garden. The cool winter vegetables are finally starting to come in so I will be knee deep in good stuff. The only pitfall is the winter crop of potatoes. They are just too good to pass up. Another pitfall of mine is crispy chicken or turkey skin... We will be frying a turkey for Thanksgiving.

Thanks Lacey! I took a look and I will definitely give them a try after the holidays. They are pricey, although not compared to ordering a decent pizza out somewhere. I am just spending too much money trying to replace many of the basics in my kitchen with low carb stuff. It's a process!

Great advice Derek. I am so happy you will be chiming in as your success is a model for us all!

Cutting my soda was the first thing I did, and probably the hardest.

I have been buying beautiful organic romaine & it is so crispy and delicious that it is actually a treat. It's great with almost any Mexican food in place of tortillas, or even cheesy sloppy Joe type stuff. I am going to try enchiladas using a thinly sliced zucchini wrapper with leftover turkey after the holiday.

Your Philly cheese steak pepper sounds divine!

On the bottom of the app click on My Day then up above click on nutrients and it shows the grams and percentages of Fats, Carbs and Proteins

Well, I can tell from recent photos posted here and there that people are slimming down, so I am very happy to see this thread with hints and links and motivation. I looked into Keto, got a bunch of books out of the library, etc., but realized it would not be something I could handle without feeling deprived. That said, lower carb definitely works for me. I'm about 45 lbs. down from my high and have been in a range for a while, which I guess means I'm okay at maintaining, but I sure could use a nudge to lose the rest of the weight!

Cauliflower cooked in chicken stock and then smashed with Laughing Cow Light is very comforting, and also, for those who live close to Trader Joes, they have cauliflower pizza crusts.

Congrats Laurie! 9 pounds is great. The hardest thing for me is to get through the first few weeks. I’m going to use your 9 pound loss to help me motivate.

Happy to see you joined the conversation serenasea and I love to see that you have lost successfully! I'll definitely try cooking my cauliflower in chcken broth and smashing it with cheese. Yum! And I will check out Trader Joe's for pizza crust. I'm not a big fan of TJ, but it is next door to my fat girl store, so when I need to downsize my clothes I will pop in there :)

DH and I have been following a keto diet since April of this year. We both needed to lose weight and we want to keep an eye on our blood sugar...my mom was a type 2 diabetic and DH's blood sugar was high at his last appointment.

Since April he's lost 35 pounds and I've lost 30. We still have some to go but we're pleased with the results and we never feel hungry. There are so many blogs with great recipes...you can make a low carb / keto version of everything!

The best low carb pizza crust we've found is this one...the ingredients sound weird, but it comes together easy and really tastes like pizza.

Well, I can tell from recent photos posted here and there that people are slimming down, so I am very happy to see this thread with hints and links and motivation. I looked into Keto, got a bunch of books out of the library, etc., but realized it would not be something I could handle without feeling deprived. That said, lower carb definitely works for me. I'm about 45 lbs. down from my high and have been in a range for a while, which I guess means I'm okay at maintaining, but I sure could use a nudge to lose the rest of the weight!

Cauliflower cooked in chicken stock and then smashed with Laughing Cow Light is very comforting, and also, for those who live close to Trader Joes, they have cauliflower pizza crusts.

Oh that cauliflower sounds good last time I made it It wasn’t that great. Too lumpy HHH there is a frozen one I like.
Been wanting to get to TJ’s ever since I started this but it’s like 90 miles away. One of the YT channels swore by these seaweed snacks she said to buy there.

On the topic of food and holiday coming up, went to the grocer for turkeys, one to fry and one to roast. Put an organic one in my cart then looked for a 12lb. one to fry and saw the price of 75.00. Looked at the one in my cart, same brand- organic, it too 72.50. Hell to the no!!! It's a freaking turkey. Bought 2 Butterballs for under $40.00 for 2. Don't think it will kill us to eat them... Do you know how many spins I saved??

Yep I too avoid those higher priced birds. I'm a Jenny-O fan. I bought one fresh, 20 lb at $1.99 lb. Then because I bought $25 worth of other items I got a frozen bird 14 lb for $0.47 a lb. That guy (and a 2nd one I went back and got) are in the freezer for later in the year. We will have delicious roasted turkey and lots of soup with the leftovers.

I usually make a turkey noodle soup but as I too a trying to reduce my carb intake I will just make it a turkey vegetable! That should help.

I like scrapple when we were in AC Bob took Kevin and I to breakfast after the boat canceled fishing and I had scrapple pork roll and grits. hhh Loved it all.

Went out to lunch with a couple skinny mini friends. They had beautiful sandwiches and fries & I had a cobb salad (dressing on the side) which was delicious! I didn't feel deprived at all. We hung in there today and since it was just the two of us (I begged off the big Plymouth Thanksgiving) we had a Keto Thanksgiving. Turkey, mashed cauliflower, creamed spinach and rutabaga pomme anna with Keto gravy. Everything came out great except the creamed spinach was way too heavy, so I won't be making that again! Dessert was baby pumpkin pie cupcakes with whipped cream & they were actually amazing :victorious: And we stayed within our daily carb count!

It is definitely the easiest 'diet' I have ever tried, though I hate to use the word diet as this is more of a lifestyle change. I am trying to go full on Keto, and yes, I am tinkling on a strip every day - haha. And I haven't been disappointed yet :) The only time I have been hungry on this is when I skip a meal, or come in too far below my calorie count. Not being hungry helps avoid the junk binges. And the fact that Frank is doing it too means I could purged most of the things that are not Keto friendly. The local soup kitchen was happy!

The rutabagas were delicious, although I would have broiled them for a few minutes t get them crispy if I didn't have so much stuff cooking. I actually had one for breakfast this morning with sausage, egg & cheese on top sort of like a wacky eggs benedict. I liked it but Frank thought I was crazy :D It is fun trying new things.

Those look delish. We roasted Brussel sprouts in a small amount of olive oil and sea salt for thanksgiving. They were really good. I’m going to roast some cauliflower next. [emoji3]

I swear it took me like 3 months to lose 5 pounds but only took 3 days to gain them back again. So discouraging but I'm hoping I can get back on track. Of course no point until after mom leaves and after my next casino trip lol.

I'm so glad this thread is here for everyone that is trying to do better and needs support. I did well with the 17 day diet in the past. I will likely try it again the trick is when I can start it and behave for 17 days with no distractions. Maybe I can start on Dec 4th and stick with it at least until Christmas if I can also stay away from the casino.

People swear by kale chips ... I've made them a couple times but haven't been able to get them as crispy as I'd like. I've even seen "cool ranch" flavored ones in stores here.

Why can't you eat sprouts? Like your stomach doesn't tolerate them? That's how I am with spinach.

I will be joining this group tomorrow. Start a 28 day challenge at the gym. Making my list and shopping later today. I really like buffalo chicken salad.. I add jicama, crispy romaine, blue cheese crumbles, and buffalo chicken. There is a really good yogurt blue cheese dressing that is low in sugars. You can make up all ingredients and do buffalo chicken lettuce wraps, feels more appetizer indulgent than it really is!

I have lost and gained back all of my weight back after falling off of the wagon. I too am starting again tomorrow. I agree with Penguin, continuing to eat a smaller amount of carbs may be better in the long run. I fell off the wagon because after months of no carbs I went into junkie mode and ate every carb in sight.

In addition to eating no carbs I will also eat clean when I am trying to eat better. So that means no spam or scrapple, or lunch meats, I cut out all the processed foods that are high in sodium and preservatives.

I find as I am getting older I am retaining so much fluid and cutting out all the processed food helps me lose the fluid you retain from eating too much salt.

I definitely tend to stress eat and lately I have been stress eating with everything going on and my continued work load. But I know I do this and I need to stop, I am currently at one of my heaviest weights not being pregnant and I can't continue to keep adding a few pounds on here or there.

Congrats to all of my fellow Jokers on your weight losses and continued success. Best of luck to the rest of us that are jumping on the better eating wagon and lots of luck to all of us.

@Borgata Babe --- I do agree with the water weight thing. 2 weeks ago we spent 4 days partying and gambling in AC and I gained 8 pounds. Now that is only possible with water weight gain. Google water and lo carb eating and you will see that the really quick weight loss of over 3 to 4 pounds per week is fluids to a high degree. We do monitor our calories and carb intake loosely. Not going to track every little thing every day because that will not happen on a forever basis. Right now staying around 50 carbs a day and 1400 calories for Cathy and little more for me. Meat portions are around 3 to 4 oz except when we do the porterhouse steak and baked potato.

I too am a binge eater and daily grazer. Have cut out eating candy or croutons for grazing. Added almonds but not more than 15 to 20 per day. Also cheese sticks.

Congrats to Laurie for the first 10 pounds. Know what you mean by Casino lifestyle and having to regroup a little. But when we have the willpower then it is our choice on how to go about how we will reduce or change our eating habits. Hell still got to have fun.

Not sure many can make a permanent change in what to eat and what not to, but we all can exert control on how we go about this.

I love kale chips, they're easy to make, BUT...they are addictive and very messy to eat, as they shatter if you try to take a bite instead of popping the entire piece into your mouth. I try to do my eating sitting down, but it seems that as soon as those chips come out of the oven, we're standing over them eating them right from the baking sheet!

We went to a local spot for brunch today. Since everyone is cutting carbs, I figured I would try too. I put potatoes on my plate but didn't eat them. (not many) Eating everything else first, I was too full for the potatoes and didn't feel deprived, but victory.
I do good with burgers, as I can't eat a whole one with a bun, so I have been going bunless. (what's for dinner tonight)

Casinos trips are not a problem for me, once I start drinking and gambling, I have zero interest in food.

Kale chips are good when made fresh, tear up leaves into large pieces (make sure they are dry), toss in olive oil, salt, pepper and whatever other seasoning (garlic powder, cayenne, chili powder) and bake at 425 until crispy and devour.

One thing we do do (note the space between the do and do). Cathy makes up a batch of cookies and we freeze the individual cookies. Say about 1 1/2 inches in diameter. 2 hot fresh baked cookies every night. Yes it is carbs but does satisfy the craving for carbs/sweets, but in moderation.

Meal prep game gone wild here tonight.

After a no hold barred thanks giving 3 day binge back on track.

Make these easy ass egg muffins

Used bacon ham onions broccoli peppers jalapeno or whatever kinda omelette style ingreditents you want.

Made some broccoli cheddar and ham

Some onions and peppers and Gouda

And some Monterey jack and bacon and ham and jalapenos

Used egg white and cooked in muffin to for 350 for 30 min

No need to add salt or pepper til warmed up when ready to eat

This diet has really change my eating habits. Before April, can’t think of anytime I didn’t eat three full meals day in day out. I would feel faint if I went 6 hours without food. Now I can whole days without eating if I want to - with no hunger, sometimes I have to remember to eat something. Feel much more alert without the sugar.

I am still experimenting with new recipes, and now I am waiting for my Instant Pot to arrive tomorrow. I figured I would join the craze since it sounds like it will make healthy cooking more fun. I also ordered a small food processor with a Spiralizer that I am even more excited about haha.

Yesterday for lunch I took the stock Frank made from the turkey and threw in some chunks of turkey and some cauliflower crumbles and it was very filling and quite good. I made cheese crisps to go with and have a little crunch.

Dinner was shrimp & broccoli alfredo on spaghetti squash. It was good, although I will look for a better alfredo recipe for next time as this one didn't want to thicken. Very filling and satisfying though!

I coat the almond with 1 egg white mixed with 1/2 Tbl water and 1 tsp salt. Bake @ 325 for 30 min, stirring after 10 and 20 min.

Nhcris, I bought a spiralizer from William & Sonoma last year. It is pretty easy to use and is worth the money spent if you use it often.

I replace pasta with zucchini whenever I go back to eating well and my family eats a lot of pasta.

Love this thread! I started on the low carb venture the first part of October after a disaster Doctor's visit. My A1C was the worst it had ever been. That jolted me into really watching my carbs to control my blood sugar. It has got to be a lifestyle change and not a diet.
So far I've been doing well even though I have had some not so good days due to traveling. I've lost 12 pounds.

WalMart has a really good frozen mashed cauliflower dish for only a couple of bucks compared to other grocery stores around here. It is made by Hanover.

I had the most beautiful dream last night. I was in the most splendid garden, and I was dancing, spinning, moving with grace and skipping joyfully. It was not a flower garden though. Oh no, not my garden. It was a garden of bread! Every kind of bread of imaginable. Raisin bread, white bread, cheese bread, French baguettes....you name it, it was there swaying gently in the breeze. And I could smell it all, like being in the most magnificent bakery ever. Simply heavenly! I woke up to Toto, er I mean Lola, licking my face telling me it was to start another low carb day.

Some days this is hard!

Okay, you all are getting me hooked. I'm so fat now that I can't even bend over to put my shoes on. 270 and only 5' 9". Time to do no carbs again.

I did it once so I guess I can do it again. In 2009 I lost 100 Lbs in ten months. I lost weight so fast that friends and neighbors were asking Sharon if I had cancer.

Here is what I ate every single day for 300 straight days and NEVER exercised and NEVER went hungry. I don't recommend this diet for anybody, but it worked for me.

Breakfast: four hard boiled eggs

Lunch: two 4 ounce hamburger patties and one FULL can of spinach

Dinner: one 16 ounce ribeye steak and a quarter pound of roasted broccoli

Bed time snack: Two large stalks of celery stuffed with either cream cheese or Velveta cheese.

Now the bad news, After the diet and after losing all that weight, I thought my stomach had shrunk enough that I could eat like a normal person again. DID NOT happen! Gained it ALL back in the next 14 months.

I realize now,( in my case ) that low carb is not just a diet, it's a new lifestyle that has to continue the rest of my life...with maybe a "cheat" day now and then for special occasions. :)

Just adding that once in a while I would switch breakfast and lunch around because it's easier to pack hard boiled eggs for work instead of packing the hamburger patties and spinach and having no access to a microwave on certain days.

One thing goldengreeke. it is a lifestyle change. I think after you get to desired weight you can taper off SLOWLY while monitoring your weight and when weight starts back up then need to cut carbs. But have to have the will power to get on the scales every couple of days. When I go for a week or two without weighing that's when I have gained. My personal opinion is a cheat day is okay as it let's you do something you enjoy and you don't feel like you have been deprived of something. This also helps one from hogging out when you do have a slip up day and getting right back on track. So now I have to see if all of this will really work for me. hhh

I have been slowly cutting out sugar for some time but need to work on the carbs. You all are very inspiring and will try hard through the Holidays to continue cutting out sugar and moving harder on this in the new year.

I think if we start sharing here, and get enough folks to contribute I can talk our Grand Poohbah (CPT) into letting us start a separate forum category for healthy eating, or maybe even health & wellness category in general. It would be great to get healthy as a group!

Also, it's great to share where you can buy low carb supplies for reasonable prices, as my regular supermarket is brutal on things like the almond flour or cauliflower crumbles. I'll try Trader Joe's for cauliflower rice, although I am not a fan of my particular TJ's because they never have what I am looking for!

Wow, that is an amazing price on the bacon. And if Foamy is doing the cooking, I will be there! I am loving the suggestions on this thread, as well as the support.

I'll be ordering those cauliflower pizza crusts. The fact that everybody says they TASTE like actual crusts is the major factor, and there is a chart on their website comparing them to other cauliflower crusts that sold me. We love pizza but usually have it only four times a year ("Quarterly Pizza"), so I look forward to having it more often without the guilt factor!

That avocado toast looks delicious, too. Yum!

I am still scared of the pot, but I am going to get off my ass right now and go do the water test. Then I think I'll hard boil some eggs HHH. I hear they come out good, and peel easily. So, that seems like a good enough test for me today :) The short ribs sound yummy, but I don't have the ingredients and I don't even recognize some of them hehe. I set the DVR to record GMA tomorrow, as I am not sitting for 2 hours waiting for it.

The pizza crusts are from https://www.califlourfoods.com They are expensive, but they seem to run specials quite often. I got mine on special - 6 for $34.99 free shipping. I know that 's pretty pricey, but I figured we used to spend $20 or more when we ordered pizza delivery, and we don't do any of that anymore. That's my justification ;)

I was so afraid of it the first time I used it but once I used it a bit the fear went away...I think you'll be fine after doing the water test and eggs. I heard the same about the eggs but they are just easier to boil for 12 minutes... :star:

I think the instapot sounds interesting. But for eggs..... last year I found the perfect recipe for hard boiled eggs, their actually steamed. I have been making them this way all year and they come out great. Sometimes I do it for 13 min. I never over cook them this way and after the cold water dunk they peel perfectly. This was the best cooking tip I found last year. Just my 2 cents.

Well, once I figured out how to get the damn cover on (don't they know old eyes don't see so good?) the water test went fine. I boiled 4 eggs and they came out perfectly. Better yet, they were the EASIEST to peel ever and not so much as a nick in the whites. It took me less than one minute to peel all 4. They will go beautifully in tomorrow's lunch of spinach salad with hot bacon dressing!

I don't think I would use the IP for eggs unless I was already going to use it for something else. Thanks for the recipe for steaming the eggs Curlyd!

One of the first places I found recipes was a site by a woman who lives close to me here. It has lots and lots of simple recipes along with pics,carb counts, and some discussion. Take a look at

If you like broccoli I have been making this fairly low carb salad at Christmas and throughout the year. The only not so good carbs are the peas and onions (for some reason I think you aren't supposed to eat onions...but not sure)

cut up broccoli florets
cut up cauliflower florets
chopped up red onion to taste
green peas (as many as you like I usually do about 1/2 to 3/4 of a cup)
cut up bacon
parmesean cheese
mayo ( I use the lowest carb one I can find)
Truvia or any other natural sweetner

Place the broccoli, cauliflower, thawed peas, red onion and bacon in a large bowl.
To make the dressing put about a cup of mayo in a small bowl and add enough of the Truvia until just sweet. Mix together until creamy and not grainy in texture. Add the dressing to the salad ingredients and mix together and chill for about an hour. Top with parmesean cheese when ready to serve..

I think this is delicious even the next day.

Jeani, that sounds delicious! Onions are fairly high in carbs (most vegetables grown under ground share this tendency) but as long as you use small amounts it doesn't add up to that much. I reduce the amounts in most recipes now, and haven't noticed much of a change in taste as a little onion goes a long way! I mean, giving up onions just is not possible!

low carb spinach salad with hot bacon dressing

INGREDIENTS
2 cups raw, washed spinach
1 tbsp extra virgin olive oil
1 tbsp finely diced shallot
4 oz fresh white mushrooms, sliced1⁄2 pound bacon, plus drippings
2 tbsp red onion, finely diced
4 hard boiled eggs
2 tbsp slivered almonds
3 tbsp bacon grease
1 tbsp dijon mustard
1 tbsp red wine vinegar
1 tsp chopped shallots
1⁄4 tsp sweetener, optional
salt and pepper to taste

yield: 4 servings
PREPARATION
Preheat oven to 375 degrees. Place bacon on a parchmentpaper lined baking sheet. Cook bacon in oven for 15-18 minutesuntil it reaches your desired level of crispiness. Drain bacongrease and save the drippings in a separate container.
Fill a small pot of water and gently place 4 eggs in the water.Bring water to a boil and turn down the heat a bit, allowing eggsto cook for 10 minutes. Drain water and then place the cookedeggs under running cold water for at least a minute. This willallow the shells to be removed easier. Peel and slice the eggs intothin slices.
-Chop the shallot into a fine dice. In a small saucepan, heatolive oil over medium heat. Add half the shallots and cook untilaromatic, about a minute. Add the sliced mushrooms and cook for3-5 minutes until browned on both sides.
Build the salad by placing spinach in a large bowl. Addcrumbled cooked bacon, cooked mushrooms, red onion, egg andalmonds.
Prepare dressing by mixing vinegar and mustard togetherwith a whisk. Add the other half of the cooked shallots and
whisk. Add sweetener if desired. Drizzle in the warm bacongrease while whisking. Add salt and pepper if needed. Top thesalad while the dressing is hot.
Nutritional Info per Serving: 370.7 calories, 33.9 grams fat, 3 gramscarbohydrate, .9 grams dietary fiber, 2.1 grams net carbohydrate, 12.4 gramsprotein.

That looks really good, I need to get a spiralizer, I have been getting them already done a Trader Joe's, but I want to do my own so I can buy organic. Rao's is my absolute favorite bottled sauce, it is so good!

SO far I have only used it for zucchini, but I have a couple butternut squash I need to use. Even though they are relatively high in carbs, I am thinking of spiralize them and using them with a chicken alfredo type thing. I mean, butternut squash ravioli are a thing, right? So I figure it might work :) I also have a daikon radish I plan to spiralize and use in soup. I have never even heard of daikon radish before, so I have no idea how that will be! Keto cooking is an adventure!

My first time I boiled them and wasn't thrilled. So I read this website https://downshiftology.com/how-to-make-and-cook-zucchini-noodles-the-most-popular-methods/ and then decided to use the saute method. I put a little olive oil in a wok style frying pan, and just tossed them until I liked the texture. I added salt about halfway through the cooking, as I didn't want them to release too much water while they cooked. We like them al dente, so they were still crispy when I took them off after maybe 3 minutes. It really depends how you like your pasta, I think.

They were what I would call tender crisp. Just enough bite to them, but still nice and tender. I wanted to keep them from getting mushy, because I have 2 leftover, & don't want them to disintegrate when I reheat them :) Yes, to loaded cauliflower every day!

Hubby hates cauliflower, I love it. So I tend to just eat it raw for a snack. I might try roasting but Hubby hates the smell. Not sure why I married him almost 45 years ago!

There are recipes to roast it whole. I break it up into florets or smaller and roast. Instructions are above but basically 400, some oil, salt and pepper and check every 15 minutes and stir until it's as brown as you want.

I've also seen people slice the whole head into steaks and roast those. The Orangette blog may have a recipe.

I’m not sure but I assume they would. I have only made them in a muffin top pan. I got my pans from Amazon several years ago but I think they are easier to find in the stores now. Good luck!

OK I just had to create a folder for Joker's Recipe's for all of these internet links! There are so many great ones.

I even found one for your egg white vege muffins dvandentop, although yours look better than the recipe I found. Good job on the loss!

Low carb is easy. Stop eating the white 'stuff'. Been 15 yrs. since I dropped 30+lbs., and still haven't gained it back. Eat my carb foods in the a.m., b/c you'll burn those first .. fats second .. then muscle.

Cut out or down on potatoes/chips/white bread/rice/pasta. Now eat whole wheat bread/pasta/brown rice/few potatoes/very few chips.

Didn't do a complete Atkins, just modified it some. Never went completely carb free for those first two weeks.

Down went the cholesterol/blood pressure/weight from 187-154, and been there ever since, w/o even trying.

Headed home from a successful casino trip. Not monetarily haha. But with Laurie with me, we were able to keep each other on track and do a good job of sticking to the food plan.

Even at Ruth Chris we made good choices (we think) and only ate a couple bites of anything questionable. And damn, the steak & shrimp & salad were so freaking good!

It was fun to figure out the best options, and have them tweaked for us when necessary. People were happy to oblige, which was well wonderful.

We also kept the cocktails to a
Minimum (2 for me the whole trip and both carb free) which helped and drank a shit ton of water.

Having a buddy along really makes a difference when you feel like caving HHH.

I had my annual yesterday and the doctor was pleased with my numbers. Down 12 lbs. since this time last year. But have a lot more to go. My A1C was back to a normal level where I am no longer considered pre-diabetic. My sugar count dropped dramatically, and my cholesterol was much better. It inspired me to work harder in the coming year.

I will be looking at all of the suggestions from you guys. But damn , I still love my pasta.

Keep it up! Isn’t it fabulous when the doctor is happy with you & you know you are in the right track? Repeat after me. SUGAR IS THE DEVIL and carbs are just sugar in disguise.

I’m telling you, get a spiralizer and try zucchini pasta at least once. It has changed my Life because we eat Italian food at least weekly and often more frequently. I ‘almost’ prefer it to pasta now. I’ll be trying daikon radish noodles soon. Stay tuned!

Dave, here in the South we drink sweet tea. It is huge down here. That has been my issue for years. I could drink it by the gallon. That is one think that I have given up. I don't care for the taste of Splenda, so it is the pink packet for me.

Yeah, I mentioned the sweet tea thing while we were getting ready to order at Brio. Glad your annual went well. I've done the keto thing before and was pleased that I did not have the sugar craving I thought I would. I now kind of do my own version. I liked bread and pasta, too, but don't eat much any more.

Dave, here in the South we drink sweet tea. It is huge down here. That has been my issue for years. I could drink it by the gallon. That is one think that I have given up. I don't care for the taste of Splenda, so it is the pink packet for me.

Zeus I too loved Sweet Tea, that and coke! That's all I drank. But I don't do any artificial sweeteners, so when I gave them up, I just did water, for about two weeks. I gradually brought in organic unsweetened tea and it was delicious. I don't know if it helped doing just water for a couple of weeks, but I didn't miss it at all. I've recently added Kombutcha, which is a real treat and I'm hooked. I have just a little serving in a wine glass each night while I cook lol.

I have not been a fan of Coke or Pepsi in probably 35 years. Always a Diet Pepsi person if I have a soft drink. Allen would drink the sweetened ones, alo my with sweet tea constantly. He gave up sweet tea and Pepsi this past January, and lost over 30 lbs. from just that. All that sugar really packed on the weight.

I will admit to watching the thread closely, just not ready to give up the "white" stuff. I love my breads and pasta and Pepsi. I am not much of a veggie eater and have started trying to add more veggies in, but damn it's not easy.

"give up the white stuff" .. Go for the whole wheat pastas. Has a lot more flavor. Rice too.

Sweet tea is our thing in Texas too of course. When I gave up sugar many many years ago it was hard to find a sub for sure. But Stevia is what I love in my tea now. There are many formulations out there and some are awful. But Sweet Leaf brand drops are really good and also come in lots of flavors. Our local grocery H-E-B has their own liquid which is a mix of stevia and erythritol which I love. The key is to not use too much stevia or it will taste bitter.

I tried these super simple cream cheese pancakes this morning and I am in love with them. Eating them felt like cheating!

My picture isn’t pretty, as this was the first attempt and I guess I started out with my temp too high. But by the last one I had it down! I used sugar-free syrup but these would be great with a dollop of keto whipped cream and some berries.

Lesson for the Day

When you cook radishes they turn into potatoes. Without the carbs!

I made a turkey doodle soup today, and threw in some plain old radishes. I swear to God, they taste just like potatoes. This tastes really good, but I took out the carrots (too may carbs) so it is pretty blah looking.

I read that if you roast radishes and then mash them, they are like mashed potatoes. This may be an option for folks that don't like cauliflower. Radishes - Who Knew?

For Christmas dinner I made a ribeye roast, cheese cauliflower and roasted broccoli. Made it through all 3 holidays without any cheats :)

Yesterday I made snickerdoodles and they weren’t bad, though I will cook them a little less next time she they are chewier. Today I made a cheesecake in the IP that tasted good but was far from picture worthy. That's gonna need improvement :)

I got lots of Keto gifts including an immersion blender!!

Mitch & I polished off a bottle of Crown the other night. Well, he did, as I 'dozed off' after 3 or 4 glasses. I hate when my kid can outdrink me haha

Prepped a bunch of stuff tonight, hard boiled my eggs, cooked up some chicken, cut up veggies, cut up a little fruit because it is my go to sweet now. Packed a bunch of things to have at work when the craving kick in. Will get hard core after Saturday when I do Christmas with my bonus sons and their girlfriends. One wants cheesy hasbrown hot dish and the other wants Snocker Salad.m I will concentrate on the ri eyes and the ham wrapped asparagus.
