It seems like I do the most of my cooking on the weekends. Here are my weekend low carb cooking plans...
Friday - Jalapeno poppers we made this fall when the farmer's market was full of jalapenos and froze. Probably a shrimp cocktail to go with it.
Saturday - Tomahawk steak and sheet pan mushrooms. Mushroom recipe:

Saturday and Sunday will be having avocado and bacon on toast for breakfast. I could eat these three times a day.

Being corn beef is on sale, bought 2, so that will be dinners and lunch for lots of meals.

I’m currently roasting a chicken. We’ll have lots of leftovers. Tomorrow I’m doing ribs in the crockpot. I’m searching the internet for a simple recipe now.

The tomahawk ribeye was the best steak I’ve had in a long time...the sheet pan mushrooms were delicious but next time I’ll roast them at a higher temperature.

This was mostly a lost weekend for me, but today I will be doing some food prep for the week. I found a new meatball recipe to try. I also got some country style spare ribs I will cook up in the Instant Pot. I'll boil some eggs, cook some bacon & get all my salad ingredients ready.
For dinner tonight I plan to do a chicken paillard over spinach and arugula. I am going to try to replicate @DK528 (http://jokerswildforum.com/member.php?u=145)'s tomato vinaigrette with it.
@Mary9915 (http://jokerswildforum.com/member.php?u=827), I never ever thought to cook mushrooms in the oven. That recipe looks divine with just the right flavors, and it is going on my list. I wish I hadn't bought the lazy pre-sliced mushrooms this week, or I would make them immediately!

It all looks great! I could never get my eggs hard boiled perfectly until I found a recipe to follow. I don't boil them I steam them. 12 minutes in a steam basket is the recipe but I always due 13 just to be sure. Then dump into an ice water bath. They come out perfect every time and are so easy to peel.

Oh they peeled easy foamy just thought the yokes should be softer. The recipe did give times for that I just boiled them hard as usual

It was foamy’s recipe. Not sure if he made it up or saw it somewhere.
Marinated fresh Brussel sprouts in Aldis balsamic glaze. We only did an hour would do longer next time. Wrap in half slice of bacon. Secure with a toothpick. Bake at 350 for an hour on baking sheet (line in foil for easier clean up)

That looks so so good! How big is that bad boy? I only see ginormous ones around here, but looking at yours I bet it would freeze well.

It was HUGE! 9 pounds! It took forever to braise.

This didn’t have one...it was a Smithfield shoulder. Not injected and so well trimmed. First time we’ve bought one of them and we’ll get it again!

I smoke then in a tinfoil pan so I always cut it off better bark and me inside stays moist. It look like that one was cut off to me so that makes sense

I've used leftover quinoa to make a caprese quinoa salad. Can't find the recipe but I just make a tangy vinaigrette and add some fresh mozz and a lot of veggies.

Thanks DK... I’ve found the quinoa with green enchilada sauce is great together without the chicken... with a bit of sour cream it makes it even better. Haha I’ll try to finish the quinoa off this way ;)

Purchased some good size avacados. About the size of a medium Starbucks. Large ones in the past werent too good just big. Lucked out as these are excellent.
Photos are beside objects so you can see the size. (By the way I have become quite skilled at extracting the meat from the skin without waste)

Hey those are the dishes I bought when I got married 45 years ago. We loved them and used them until we gave to our daughter who still uses them. I had some silverware that had daisies engraved (well I guess molded) on the handle. Thanks for the memory.

Mauretania Cleaning lady once a month. She is the greatest. Not sure what she uses - brings her own stuff as she doesn't like my cleaners. I just pay for it. Gets kind of costly, but it keeps her from grumbling, and I don't want her to quit and I don't want to do it.

These were given to me around 1995 by an ex fiancee. If you would like them I would send them to you - I have no attachment. That's very nice of you but no thanks. I just love to see them because they remind me of the start of my marriage. They are great for the microwave! I gave them to our daughter when I bought a new set of Corelle in the French White. I currently use those for everyday but I have 5 other sets of china and stoneware. I have inherited a number of family china sets! I really need to let go of a few sets.

I'll be making stuffed acorn squash. I'll have half tonight and the other half tomorrow. It's an old Moosewood (Ithaca, NY cafe) recipe.
I also plan to make a WF lentil soup that I tried last year. It should last a couple of days.
I love this cooler time of year to and autumn recipes!

Pat, have not yet had Costco's ribs, but they are supposed to be great! Also, have heard about the Dr. Pepper recipe many times.

Only joshing about the candy! We just came back from Costco, so we will be having their stuffed peppers, which are excellent, and for myself, I will add sides of mashed cauliflower with cheese and broccoli florets.
