I had some Mexican chorizo that we picked up from a little mexican market that we didn't even know existed. I wasn't sure what to do with it, but I settled on a Keto version of Arroz con Pollo. I wish I had chicken thighs instead of boneless breasts, but it was still really yummy! Of course, I used cauliflower rice instead of the real deal, and had to adjust some of the cooking times.
