Forgot to take a picture and this is all that’s left, hhh!
Air fryer chicken wings (we had a spinach salad too with bacon, egg, marinated onions and tomatoes).
I think chicken wings are definitely my favorite thing to make in the air fryer, only down side is quantity vs the oven. But they cook in less than half the time and are so crispy and juicy!

It’s a crappy rainy day here so I’m puttering in the kitchen.
Today’s keto treats are:
https://uploads.tapatalk-cdn.com/201...92b3c36836.jpg
Avocado chocolate no churn ice cream. This is delicious!
Then I made some crackers. Texture is good but next time I’ll add more seasoning.

I’m on the hunt for a good low carb bread. I like this recipe and they were very easy to make.

Not low carb...but strawberry shortcake for dessert.

Mary, I need the recipes for the crackers and the ice cream. I was telling Frank yesterday that I am really craving crackers or something with texture to have with cheese or dips. I am pretty tired of chicharones. And that ice cream looks amazing!
You are so good about trying out new things. I am in a rut and need to get adventurous again.

Question ... are you guys making your own chicharones? And if so, how are you preparing them?
As I said, We are in a bit of a rut around here eating mostly the same things over and over, so I haven’t been posting a lot of repeats. I mean how many plates of eggs bacon and avocado do you want to see?
But here’s a few things including a fun night out at our favorite local Mexican restaurant.

Steak and cauliflower mash. I know, boring, but still delicious.

Buffalo chicken salad on mixed baby greens with tomato.

This one looks scary ( shoulda seen Frank’s face when I served it hehe) but it tasted good. Ground bison with onion in brown gravy ( a little cheaty) over broccoli cauliflower mash.
Dinner at El Colima

Jalapeños stuffed with chicken and cheese. They tasted much better than they look!

Tequila ( reposado of course) with lime juice and salt. A pseudo margarita.

Yeah, I have to keep mixing it up. There are hits and misses but I love puttering in the kitchen on the weekends.
Here is the avocado ice cream recipe:
https://sugarfreelondoner.com/low-ca...ado-ice-cream/
I used 3 avocados and bumped up the cream and coconut milk a bit. Otherwise followed the recipe. I think next time I might try it with all cream and see how that works.
Here is the cracker recipe:
https://gourmandeinthekitchen.com/ho...e-gluten-free/
In this one I used the whole egg and I added a couple tbsp of sesame seeds. I used a sprinkle of smoked sea salt on top. I think it could use more seasoning in the next batch...maybe rosemary or onion and garlic powder or something but the recipe is good.
Here’s one more thing that was delicious. We always make jalapeño poppers using our farmer’s market peppers and local bacon and freeze them. We’ve always just cooked them in the oven but threw some in the smoker this weekend.

Thanks Mary! I need a few ingredients. but definitely try both of these after our cruise.
And I have to make jalapeño poppers one day. I keep putting it on the back burner, but it's time to move it forward!
Those are amazing on the smoker
Not me. Way too much work! I buy mine and I prefer the Utz brand if you have them in your area.

I did get some really good ones when I was at Kansas City but they were a local brand and I have no idea what they were since I grabbed them at a gas station convenience store :)

OOh so cool @Laurie! How do they taste? Where did you find them?
According to Facebook they are going to be at Costco and Walmart.
I’ve been offline for a few days so I’m trying to catch up. So if someone already posted these I apologize.
I finally ordered some Cut da Carb flatbreads. I’ve seen so many postings about them on Instagram and I wanted to try them. They are a bit pricy, but really just about a dollar or less per serving if you eat a whole one and they are big.
They are a very thin flatbread that just tastes like bread.
Only 9 net carbs per sheet and they are so versatile!
https://uploads.tapatalk-cdn.com/201...c8d1f9d7fb.png
I will be using them for pizza, wraps, enchiladas etc etc. They are only available from their website but I hope they get into stores eventually. Oh and shipping is free!
I love them so Let me know if any of y’all have tried them!

Instapot Korean short ribs over cauliflower mashed potatoes.

This Instapot recipe makes the most delicious sauce and it’s pretty low carb.

Appetizer we tried at the lake. Cheese stick wrapped in bacon you have to freeze the cheese sticks first then fry in a little oil not cooked perfectly this time but will definitely try again

That looks really good @goldengreeke
@goldengreeke, that is Keto for sure! And it looks amazing!
San Antonio may be hot as hell this time of year, but those people sure know how to eat!! I need to ask you about Papadeau next time I see you.
Made this zucchini on the grill sliced part way and put cheese and bacon bits between each slice. The cheese kind of melted out but still good since zucchini will be in abundance soon! Will make again

Laurie, I don't have a recipe, but I worked with a guy whose wife made stuffed zucchini boats. You just slice the long way, remove some meat and stuff each half. It solves the running out problem.
Also have seen them sandwiched when cut the long way. That works well with the small ones. Toothpicks hold them together while cooking. Can stuff with nearly anything.
