It's slow cooker Porchetta time!
This is easily the best thing I make. It's amazing and so simple. The rub on it has rosemary, garlic, fennel seed, amongst other things. The rub makes the whole house smell amazing.
The most "difficult" part is searing the pork loin, which isn't even hard, only takes five minutes.

Then set in crockpot with white wine and chicken broth and in five-six hours, will be shredded goodness! http://tapatalk.imageshack.com/v2/15...748262c79c.jpg

I couldn't find the exact type of pork loin that I wanted so this is a little bigger than what I normally make.

And one of the ways to have leftovers... on a baked potato with butter, cheese and sour cream. (This is my husband's; mine is a little more healthy hence boring looking)
