Thanks for this Laurie! Does the mct oil give some flavor to your coffee? I love my caramel flavored creamer, one thing I haven't given up yet but would try this if it added some kind of flavor. Congrats on the weight loss! [emoji294]

I just ordered some of the MCT oil you use from Amazon. I know that fat makes you full and I know I need more fat and less protein in my diet. I lost weight initially but have plateaued like Serena and I want to lose more weight. I drink iced coffee in the morning, wonder if that'll work in it?
Thanks! I said if I just maintained during camping season then I would be happy and I have done that and still losing but slower.
I'm sure it will work in iced. I've seen people use one of those little handheld blenders to mix it in but I just stir it in my hot coffee.

Kim--you heard correctly. I picked up Baha Bob's margarita sugar free mix today at Total Wine and More(the world's largest ls)((even bigger than Lucy's)).
It is so good. You cannot tell that it is sugar free. I will try the mojita mix next. Thanks for mentioning it. I've tried others that were not nearly as good.

Yeah I drink a tablespoon or mct oil in the morning too does a body good
So I went out today and bought some keto strips and am disappointed to find that I'm not in ketosis. I really haven't been counting carbs, but more like have been conscious of what I'm eating and trying to choose very low carb options.
Not doing any research hasn't helped since I found out today that the Atkins candies contain malitol which could actually kick you OUT of ketosis. Ugh, and they tasted sooo good!
I have lost about 3-4 pounds only and I'm sure that's more from cutting out the high sugar sweets and French fries rather than cutting back on carbs. Going to do more research but I guess it's just as simple as eating natural foods low in carbs!

I have been wicked lazy and boring lately, just eating the same old, same old stuff. I had these little turkey rollups for lunch - slice of deli turkey with a little mayo, topped with a butter lettuce leaf, slice of cheese (mine was cheddar but I bet it would be better with Swiss) and some chopped Kumato cherry tomato and a chopped baby onion. Roll it up, add s&p if desired.

I actually saw a recipe that skipped the cheese and added chopped bacon to make it more like a club sandwich, but I don't have any bacon thanks to Gout Man.
I saw another one that used Italian cold cuts and provolone, and condiments like pickles, banana peppers, etc and then a spritz of Italian dressing, like an Italian sub.
Anyway, lunch was simple and tasty and for some reason I feel more motivated to get back to experimenting! I found some awesome recipes for grilled avocados done differently, and a couple of crab cake recipes that are on the agenda. I'll report back!
I know nothing (obviously) about the Keto diet. Can you eat fried green tomatoes?
Fried foods are tough, because wheat flour is a no-no. There are somethings you can substitute, but they really aren't as good. Here's one recipe I found using peanut flour. Low Carb Fried Green Tomatoes
Ingredients
- 3 medium green tomatoes
- 1/2 tsp salt
- 1 large egg
- 1 tbsp heavy cream
- 1/2 cup peanut flour roasted and defatted
- 1 tbsp Cajun seasoning
- 1/4 cup olive oil
- Slice the tomatoes into 1/2 inch slices and sprinkle with salt. Let sit 5 to 10 minutes.
- In a small bowl, whisk together egg and heavy cream
- In another small bowl, whisk together peanut flour and Cajun seasoning.
- Heat oil in a large skillet over medium heat until shimmering. Dip each tomato slice into the egg wash, then dip into the peanut flour mixture, turning to coat evenly.
- Fry tomato slices until browned and crisp, about 3 to 4 minutes per side. Remove and drain on a paper-towel lined plate. You will probably have to work in batches, depending on the size of your skillet.
Dinner tonight was Crispy Oven Baked Chicken Thighs and Oven Roasted Cauliflower Parmesan.

Made chicken cordon Bleu wrapped in bacon. It was meh for all the work involved. Needed more filling and less chicken I think. Swiss, Black Forest deli ham, and Dijon mustard inside. I think that looks really good, Ida! I have learned that Ketosis cooking entails a lot of trial and error, nd it does tae a lot of effort. But you are on track for sure!!

I love your farmers market haul Chris! My farmers market trips on Saturday morning is the favorite part of my week! I live in a small suburb and we only have maybe 15 vendors and only 4 farmers but their stuff is yummy!
I did a bunch of keto cooking and prepping this week. I made 4 quarts of refrigerator pickles, a pint of ranch dip, a pint of blue cheese dip and some keto bread. We smoked a couple pork shoulders yesterday and had pulled pork with mashed cauliflower last night. I’ll vacuum seal a bunch of the pork and freeze it for quick meals this winter. Leftovers for lunch were delicious!

Nicely done Mary! The pork looks fantastic, and one f these days I will attempt some Keto bread. I would love to know your recipes for the dips. I enjoy a few chiccharones with dip when I am having a snack attack :)
I think our Farmer's Markets are similar. We have about the same number of vendors, but they are pushing maple syrup, jams and jellies (waaaah), wine and other things I try not to look at. But, the 4 or 5 veggie folks have some pretty nice stuff.
