I’ve gotten rid of any weight I may have gained in Vegas and am down another pound. Go me! My pee strips show I’m in ketosis so I hope my weight will continue to go down. I still haven’t gotten my lazy self to the gym. Maybe this weekend.....
Can anyone advise me: I like to eat 1/2 or 1/4 avocado each morning. I tightly wrap the remaining avocado in plastic wrap and store it in the fridge. By the next morning it’s completely brown. I scrap off the brown parts and eat it anyway. Is there a way to store avocado without it getting all brown? Is it bad to eat it if it’s brown?
I’ve heard that lime will keep it from turning brown but that might not help you. Here are some options I have not tried yet

Great job Elf! I made guac last night and the top of it turned a little darker green but looked fine once I mixed it up with the still bright green underneath. I used fresh lime juice on the guac and someone told me to put the pit in with it to help it not turn as quickly. Laurie and Chris are big avocado fans so they will probably have some ideas.

Cathy uses lime juice and leaves the pit in the avocado. Just slight brown on surface. Tight wrap in plastic wrap.
Here’s a weird but good concoction I threw together. Picture is not pretty but it is tasty
Kale, strawberry, almonds, cranberry and avocado

I gained 10 lbs back (so did my husband)….holy shit I guess that was a lot of eating and drinking we did! Was on vacation for 2 weeks and came home and kept up the high carb eating for a week. I'm trying to put the brakes on now and stop any more damage of undoing all I lost. Coming here for motivation....looking back at some of the recipes here to try. Hope you other low carb/keto peeps are doing much better than I am
I know you had a fabulous vacation, so no regrets allowed! saw some of your pictures and wondered how you would make out. Everything looked well worth it to me! You can get back to it, and those pounds will disappear.
I am still plugging away, but making no progress. I haven't posted much because now it is just rotating through the same foods. I haven't gained any back, though, so I guess my old body is content here for the time being. I have several trips planned this summer, and some of them will involve many carbs. I will just be sure to buckle down when I get home. Derek is my role model for knowing how to splurge on vacation and be disciplined at home!
Hehehe- no regrets- I'd do it again!!! BUT...just have to learn to go back hard when I get home. The trips away are the hardest because like you, I know carbs will be involved. I'm cutting nuts, dairy, and alcohol (well we will see about that one. LOL**Edit- fuck...I failed already on that one**). Good that you are staying the same, that's going in right direction. :)
So when we were at our son's house our DIL made some delicious steamed artichokes in her Instant Pot. It finally made me order one. As I have mentioned before I have cooked with a pressure cooker since I was a young girl. I'm use to them. But I really did like the automation of the Instant Pot. I made a delicious pork roast. It was very easy to cook the roast then re-open and add the vege's, then re-set and walk away. It has a nice Sauteing/Searing feature. I didn't have to hear the hissing of the regulator and I didn't have to worry about adjusting the flame. So first meal was very good and a bit easier than using my pressure cooker. If it cooks the rice like my rice cooker does (have had one since the 70's) I think I can pack up 2 pots and have room for just the 1!
I don’t know if this is Keto but bacon wrapped chicken is delicious.

OMG!!! I made it tonight. The sweetness of the brown sugar mixed with that smoky flavor from the smoked paprika. Did I say OMG!!! This is a keeper. Thanks for posting this, GG!https://uploads.tapatalk-cdn.com/201...3fd497ac98.jpg

Well as soon as you said brown sugar I knew it wasn't keto, hhh. Sure looks good but I'm back to the program after a 30 day hiatus. I conveniently carried over my bad ways 2 weeks after returning from KC and the scale is screaming at me to get cracking again!

They both look really good. Bacon improves most food

Haha Actually I bought it! The other night I had a craving like a pregnant woman and I had pickled and ham and wrapped them up and snacked on them. I highly enjoyed them, so we are going to see how they work for lunch. Less Cahbs without the bread! More available cahbs for alcohol! Haha
Dammit, those rollups make me really, really wish I liked pickles. Anyway, still going Keto Strong(ish). It's been ages since I posted so Here's tonight's dinner of marinated turkey tips, grilled summer squash and cherry tomatoes.

OMG, this little item right here is life changing for Keto! If you haven't heard about the chaffle craze, you are going to! I am heading out the door to go to AC, but I had to share. I will update when I get back from AC!

The picture doesn't do it justice, but it was goooood! Thank you Laurie for the idea!
Thanks for sharing! I’m making these this weekend! Have you tried different flavors of cheese besides cheddar Chris or Laurie?
I made one of mine with sliced extra sharp deli cheddar and the other with shredded Mexican cheese. They were both good and pretty similar but an even milder cheese would be really good for making sweeter ones. When I get home I am planning to go Chaffle crazy!

Well, I made Chaffle using sharp cheddar cheese for breakfast on Sunday. Neither of us were all that crazy about them...too overwhelmingly cheddar cheesy. I’m going to try again with a milder cheese and I think we’ll like them better. I also want to get some corn extract and try doing a corn dog Chaffle.
