Has anyone else noticed spices are hard to find on the shelves? It’s a weird thing to have shortages on, but for a month or so the spice section at all of my local grocery stores as been decimated.

FYI, Trader Joe's has an Everything Seasoning blend -- apparently it's one of their best sellers.
I did some shopping at Pete’s today which is normally very annoying bc they never have enough registers open, but today it was a very pleasant shopping experience!
Their spice aisle was well stocked and Ida, I was able to find that garlic, ranch, and chive blend!
This was a super exciting find in the Mexican aisle. Different flavored chicharrones for $1.29 a bag! And then, already ground pork rinds! I mean I know I can do it myself but anything that saves me a few minutes, I’m all for.
I’m learning to check out the Asian, Mexican and other specialty aisles to find keto friendly products that aren’t as mainstream!

So glad you got to find that ranch spice, I use it alot! Would love to find the crushed pork rinds too since I use a mini chopper for mine and it's a pain to do a bunch at once. For some reason, it's hard to find them here lately, must be a lot of people on keto!

Since I had a huge salad for lunch, decided just to make a small batch of jalapeño popper chicken. presentation gets an F because I forgot about it in the oven but it tastes pretty good! And an open face ice cream sandwich. Enlightened keto peanut butter fudge ice cream on a chocolate chaffle with crushed peanuts. I found a new pasta that is low carb and the most like real pasta of anything we’ve tried.

It’s not inexpensive. A bag has 3 to 4 servings in it. It’s made of lupin flour and pea protein. The flavor is good. The texture is a little grainy but not bad. You boil it like you would any other pasta. I will for sure order it again.
Oh and it is in one of my favorite pasta shapes, radiatore. I call it root beer barrels.
Thought I’d post an update. I’m on my 7th month of keto and I’m down 30 pounds! I’m so glad I’m doing keto during quarantine cuz otherwise I’d be eating my feelings and I’m a total stress eater. I’m more than halfway to my goal. Gotta keep on trucking!

I’ve been eating a lot of tacos. I eat 1 taco - low carb tortilla, carbs asada meat, onion, cilantro, hot sauce- for lunch and dinner. I buy the flap meat from Costco and marinate and grill it and store it in the fridge so I always have that as an option. It’s nice because it’s one less thing to think about.
But lately I’ve been taco-ed out [emoji23] I ate tacos everyday for about 4-5 months.

So proud of you on the keto and the garden! I keep keto burritos (hey that rhymes[emoji1787]) in my rotation and as well as keto fried chicken strips and lately have been making a jalapeño popper chicken casserole. Definitely have to always be prepared with keto friendly foods on hand. Sadly, my downfall is when I go away, it takes a week or two for me to decide to get back to it!

Pan seared halibut with Lemon butter caper sauce and a side of savory cauliflower mash. Absolutely delicious! The halibut was from Costco, and I was really impressed with it.
I am pretty new to cooking seafood, but have decided I am going to do it at least once a week. Last week I did it twice.

Your plating is quite picture worthy! Congrats on getting back to it. I also have 3 decent days in (frozen meatballs in crackpot with low sugar sauce....totally forgot about the bread crumbs they put in the meatballs) but still much better than the donuts and banana splits I had been eating last month!

I made that jalapeno popper chicken casserole the week before last and it was AWESOME! I've done a lot of chicken wings too. Think I might start clucking soon. I've lost a little over 70 of the lbs since the 1st of the year that I had gained back after my husband got sick and I was trying to get him to eat. Still got a ways to go, but it's progress!
I love this thread! Adam and I tend to drink our carbs rather than eating them. Tonight’s dinner was air fryer hot chicken (had two pieces each, hhh) and cauliflower steaks. App was a cucumber from the garden and we had some leftover stir fry garden veggies with rice which I tried to crop since rice is bad, lol. And and IPA!

As someone who never ate cauliflower, I love these. We do them in a 425 oven. Rub with olive oil and I use my favorite steak seasoning on it. It’s one from Omaha steaks, apply liberally. Roast for about 13 mins, then flip for another 8-12. The char actually happens on the bottom of the cauliflower so if you don’t flip, that side will get nice and toasty while the other just bakes.
I’ve even topped them with creamy cheesey Swiss chard as a sauce of sorts.
