There are my favorite almond buns. They are super easy. They are great for cinnamon toast or any kind of sandwich.

I am much too lazy to make my own sauce, so I use Rao's. It is the lowest carb sauce that I have found, and tastes good enough to justify the cost (when I find it on sale).

SO far I have only used it for zucchini, but I have a couple butternut squash I need to use. Even though they are relatively high in carbs, I am thinking of spiralize them and using them with a chicken alfredo type thing. I mean, butternut squash ravioli are a thing, right? So I figure it might work :) I also have a daikon radish I plan to spiralize and use in soup. I have never even heard of daikon radish before, so I have no idea how that will be! Keto cooking is an adventure!

My first time I boiled them and wasn't thrilled. So I read this website https://downshiftology.com/how-to-ma...pular-methods/ and then decided to use the saute method. I put a little olive oil in a wok style frying pan, and just tossed them until I liked the texture. I added salt about halfway through the cooking, as I didn't want them to release too much water while they cooked. We like them al dente, so they were still crispy when I took them off after maybe 3 minutes. It really depends how you like your pasta, I think.

Hubby hates cauliflower, I love it. So I tend to just eat it raw for a snack. I might try roasting but Hubby hates the smell. Not sure why I married him almost 45 years ago!

Actually I think I will roast that head of cauliflower I have in the frig. He will just gave to deal with it. Now I need instructions, what do I do? Thanks all for suggestions.

There are recipes to roast it whole. I break it up into florets or smaller and roast. Instructions are above but basically 400, some oil, salt and pepper and check every 15 minutes and stir until it's as brown as you want.
I've also seen people slice the whole head into steaks and roast those. The Orangette blog may have a recipe.

Down 8 lbs since coming home after Thanksgiving. Gotta love when you follow a plan you see results. Hope everyone else having good luck as well.
OK I just had to create a folder for Joker's Recipe's for all of these internet links! There are so many great ones.
I even found one for your egg white vege muffins @dvandentop, although yours look better than the recipe I found. Good job on the loss!
Low carb is easy. Stop eating the white 'stuff'. Been 15 yrs. since I dropped 30+lbs., and still haven't gained it back. Eat my carb foods in the a.m., b/c you'll burn those first .. fats second .. then muscle.
Cut out or down on potatoes/chips/white bread/rice/pasta. Now eat whole wheat bread/pasta/brown rice/few potatoes/very few chips.
Didn't do a complete Atkins, just modified it some. Never went completely carb free for those first two weeks.
Down went the cholesterol/blood pressure/weight from 187-154, and been there ever since, w/o even trying.
My first attempt at 90 second bread for my hamburger bun. It’s really quite tasty. I browned it for a minute in a pan to add a little crunch.
