Headed home from a successful casino trip. Not monetarily haha. But with Laurie with me, we were able to keep each other on track and do a good job of sticking to the food plan.
Even at Ruth Chris we made good choices (we think) and only ate a couple bites of anything questionable. And damn, the steak & shrimp & salad were so freaking good!
It was fun to figure out the best options, and have them tweaked for us when necessary. People were happy to oblige, which was well wonderful.
We also kept the cocktails to a
Minimum (2 for me the whole trip and both carb free) which helped and drank a shit ton of water.
Having a buddy along really makes a difference when you feel like caving HHH.

I had my annual yesterday and the doctor was pleased with my numbers. Down 12 lbs. since this time last year. But have a lot more to go. My A1C was back to a normal level where I am no longer considered pre-diabetic. My sugar count dropped dramatically, and my cholesterol was much better. It inspired me to work harder in the coming year.
I will be looking at all of the suggestions from you guys. But damn , I still love my pasta.

Keep it up! Isn’t it fabulous when the doctor is happy with you & you know you are in the right track? Repeat after me. SUGAR IS THE DEVIL and carbs are just sugar in disguise.
I’m telling you, get a spiralizer and try zucchini pasta at least once. It has changed my Life because we eat Italian food at least weekly and often more frequently. I ‘almost’ prefer it to pasta now. I’ll be trying daikon radish noodles soon. Stay tuned!

While 'sweet tea' is nearly never served up here which is fine with me .. yuck. :). Yup, we all have our tastes Zeus.
I've tried most all the sweeteners.

Yeah, I mentioned the sweet tea thing while we were getting ready to order at Brio. Glad your annual went well. I've done the keto thing before and was pleased that I did not have the sugar craving I thought I would. I now kind of do my own version. I liked bread and pasta, too, but don't eat much any more.

Zeus I too loved Sweet Tea, that and coke! That's all I drank. But I don't do any artificial sweeteners, so when I gave them up, I just did water, for about two weeks. I gradually brought in organic unsweetened tea and it was delicious. I don't know if it helped doing just water for a couple of weeks, but I didn't miss it at all. I've recently added Kombutcha, which is a real treat and I'm hooked. I have just a little serving in a wine glass each night while I cook lol.
I have never heard of Kombutcha, but will check it out. I have not been a fan of Coke or Pepsi in probably 35 years. Always a Diet Pepsi person if I have a soft drink. Allen would drink the sweetened ones, alo my with sweet tea constantly. He gave up sweet tea and Pepsi this past January, and lost over 30 lbs. from just that. All that sugar really packed on the weight.

I will admit to watching the thread closely, just not ready to give up the "white" stuff. I love my breads and pasta and Pepsi. I am not much of a veggie eater and have started trying to add more veggies in, but damn it's not easy.

Sweet tea is our thing in Texas too of course. When I gave up sugar many many years ago it was hard to find a sub for sure. But Stevia is what I love in my tea now. There are many formulations out there and some are awful. But Sweet Leaf brand drops are really good and also come in lots of flavors. Our local grocery H-E-B has their own liquid which is a mix of stevia and erythritol which I love. The key is to not use too much stevia or it will taste bitter.

My picture isn’t pretty, as this was the first attempt and I guess I started out with my temp too high. But by the last one I had it down! I used sugar-free syrup but these would be great with a dollop of keto whipped cream and some berries.

Well I'm wasting my time trying to behave right now. I will just start clean after the holidays and traveling is done. I have been roasting veggies this past week and really enjoyed them though so I think that will be something I will do more of. I'm glad you have been sharing your pictures and recipes.

It's a cold snowy night here in NH, so I threw some stuff in the Instant Pot, crossed my fingers and started her up. I ended up with something yummy, that I guess I'd call taco soup. I topped it with some cheddar cheese, sour cream, avocado & scallions and it was perfect!

Lesson for the Day
When you cook radishes they turn into potatoes. Without the carbs!
I made a turkey doodle soup today, and threw in some plain old radishes. I swear to God, they taste just like potatoes. This tastes really good, but I took out the carrots (too may carbs) so it is pretty blah looking.

I read that if you roast radishes and then mash them, they are like mashed potatoes. This may be an option for folks that don't like cauliflower. Radishes - Who Knew?
