Ok, after a few Months of the COVID diet (keto meals sandwiched between snacks and bottles of wine) I am ready to get back to it! I managed to string together 3 good days and that is a start!
This was dinner tonight.
Pan seared halibut with Lemon butter caper sauce and a side of savory cauliflower mash. Absolutely delicious! The halibut was from Costco, and I was really impressed with it.
I am pretty new to cooking seafood, but have decided I am going to do it at least once a week. Last week I did it twice.
