    Today's Texas style lunch. Probably not that healthy but it is very low on carbs

    Made this zucchini on the grill sliced part way and put cheese and bacon bits between each slice. The cheese kind of melted out but still good since zucchini will be in abundance soon! Will make again

    Breaded pork tenderloins with crushed pork rinds then fried. @zeus fried Brussel sprouts

    Laurie, I don't have a recipe, but I worked with a guy whose wife made stuffed zucchini boats. You just slice the long way, remove some meat and stuff each half. It solves the running out problem.
    Also have seen them sandwiched when cut the long way. That works well with the small ones. Toothpicks hold them together while cooking. Can stuff with nearly anything.
