DH shredded it, I made some mashed cauliflower.

Didn’t take a pic of the cauliflower but it was yummy. Lunches are set for the week.
Looks great Mary, btw is that a Le Crueset Pot you used?

I smoke then in a tinfoil pan so I always cut it off better bark and me inside stays moist. It look like that one was cut off to me so that makes sense

Well not this weekend but my chicken and rice dish that I love, marinated chicken filets over wild rice

Simple marinade = Italian dressing. Wild rice blend cooked in my rice cooker that a Joker gave to me

Another set of pics, non keto but using my rice cooker and loving it.

Chicken filets with a Super Grain blend topped with green enchilada sauce and sour cream

Super Grain mix from Whole Foods 365

Rice cooker worked overtime to cook the whole packet hhh

I’ve got a lot of quinoa left over!

I've used leftover quinoa to make a caprese quinoa salad. Can't find the recipe but I just make a tangy vinaigrette and add some fresh mozz and a lot of veggies.

Thanks DK... I’ve found the quinoa with green enchilada sauce is great together without the chicken... with a bit of sour cream it makes it even better. Haha I’ll try to finish the quinoa off this way

Purchased some good size avacados. About the size of a medium Starbucks. Large ones in the past werent too good just big. Lucked out as these are excellent.

Photos are beside objects so you can see the size. (By the way I have become quite skilled at extracting the meat from the skin without waste)
