Salsa Verde Chicken Casserole. Remembered it from last winter and tried again with a couple tweaks. Pretty tasty. Frank had his with grape tomatoes on the side, but I am stalled again so none for me.

Petite Sirloin with chimichurri, and cauliflower rice with asparagus and mushrooms. First time making chimichurri and it was delicious and ridiculously easy! I chose one with oregano instead of cilantro, as I only like cilantro in small doses. https://www.simplyrecipes.com/recipes/chimichurri/

Almond flour waffles. Almost as good as the pancakes IHOP makes that are more like dessert, lol. Super easy and so yummy. This one will stay in the rotation!

These both look wonderful!! I have only made chimichurri once to serve with flat iron steak. I loved it so I should make it again!
