Thread: Low carb eating doesn't suck!

    Did a food prep day yesterday with gym pals.



    This is a sweet potatoe bean chicken and verde bake



    Sweet pepper boats with ground turkey and brown rice



    Asian meatballs that will go over brown nice with a sauce.

    Also have a salsa chicken with rice and veggies and a unrolled cabbage rolls.
    Today we are roasting veggies, making protein balls and apple cookies.

    I will be set for 30 meals plus snacks. Look out skinny people I am coming for you

    That all looks really good Cece, and I bet you had fun doing it with friends!

    Nothing too exciting here, but keeping myself accountable so here's a couple things from the week.


    Taco salad


    Egg loaf and bacon


    Not pretty but really yummy Pesto chicken breasts


    Mashed cauliflower au gratin casserole


    Sausage and onion pizza on over crisped cauliflower crust haha


    Buffalo Wings from the Air Fryer


    Jicama fries from the air fryer. OMG SO YUMMY!

    Yep.. Cassie has an amazing house.. outlets pop up out of the counter, wave you hand under the faucet and it turns on or off. Sheila and I are both single (Sheila is a Commander on the gang unit for St Paul MN) and we decided we were moving in when the kids went to college. Part of the day was like watch CSI as Sheila took calls on a Gang murder in St Paul.

    @Nhcris, jicama fries!?! What did you add to them, just oil Salt and pepper? I have half a jicama left over and never thought of making fries with it.
    I have chopped it fine and added it to turkey taco meat to add texture (so good that way), but we’ve typically eaten it raw.

    I just used salt and pepper, but some recipes suggested garlic powder or smoked paprika. I just tossed them with olive oil, salt and pepper and threw them in the air fryer. They are a little reminiscent of sweet potato fries because of the natural sweetness but a little crunchier in the middle. I really liked them, but then I haven't had fries in forever!

    I never thought of using it for texture. Might work in meatloaf or meatballs, too. Great idea!

    Everything always looks so yummy in this thread!

    I ended up not getting the air fryer. I’ve never been a frying sort of person and it takes up so much space that I just didn’t think it was for me. Instead I got a couple different kitchen toys.

    First was a Sous vide appliance. I played with it this weekend making eggs and meat...

    The pork roast was perfectly cooked. Excellent flavor. Yesterday I made these eggs bites for breakfasts for the week. Eggs, cottage cheese and spices. These are yummy and so easy.



    The other thing I bought was a food dehydrator. My first experiment was chicken jerky, which turned out well and I can’t wait to make beef jerky next.

    Here’s the jerky, we did half with franks hot sauce and half with coconut aminos and spices.

    Everything looks delicious! I know virtually nothing about sous vide, but it intrigues me. Scared to even contemplate another kitchen toy, though. I have seen a few recipes that call for coconut aminos. I might need to add some to my arsenal. That jerky looks amazing!

    Doing a little food prep before I leave Frank to fend for himself for Super Bowl. I wish my food looked prettier, but it mostly tastes good


    Lazy chicken noodle soup




    Seasoned scrambled ground beef, my FAVORITE unstuffed cabbage, meatloaf and Italian sausages from the air fryer.
