Foamy wanted to do the smoothie day again on Sunday so I decided to try it with him. Went pretty well except the weigh in first day zero loss :( so I decided to give it another day and then a 2 pound loss. Not bad and it wasn't that hard. Might do again if I hit another stall.

Mary, I shred the cabbage, sometimes food processor, sometimes hand cut, sometimes cabbage shredder. Then add some to a crock, salt it, not too much (because you will continue to salt every layer), then pound it until it starts to juice. (use a small childrens bat) Keep doing this until you run out of cabbage. I use a 3 gallon crock to pound and then put it in a gallon crock to ferment. Once you are done, put a inverted saucer on top then I use a ziploc full of water to weigh it down. You want to make sure the cabbage is cover in it's juice. Put a towel over it and put in a cool spot for 4 weeks. You have to check it at times to scum the fungus. Don't let the smell fool you!! It stinks! After 4 weeks, I bring it in the house from the garage and let it sit a couple days at 70 degrees, then jar it up and refrigerate or baggie it up and freeze. I don't process it to can on the shelf because the heat destroys the bacteria that is good for your gut.

So good! I have so many friends every year that want some.

My Uncle had just cabbage and tomato in his garden we made kraut in 5 gallon crocks and beat it with a baseball bat too. Try this recipe butter and garlic then flour put the kraut in it will thicken and it's great.

I had some Kraut in the fridge and some Turkey kielbasa.. so guess what is in my oven. I am sure the sauerkraut is nothing like yours.. but it will have to do!

I cooked for the first time since I got home. Last night Frank grilled me a perfect filet mignon so I was a happy camper. Tonight I pounded some boneless pork chops a little, and dipped them in egg and seasoned grated parmesan cheese. I started them in the skillet and finished them in the oven because I was too weak to pound them very flat HHH. They came out perfect! The cheese sauce I made for the broccoli was too thin, but still tasted good. I couldn't even finish half of it!

Inquiring minds want to know...how did she make them?

Last night I pulled a couple of pork chops out of the freezer that we had brined and smoked last summer. They were delicious! I can't wait to fire up the smoker once the weather gets better.

Well, the old man now has a case of gout which we found out after spending a good part of yesterday at the ER. This is going to make our Keto diet more challenging, as he needs to avoid red meat, shellfish, processed meats (BACON :hororr:) and a shit ton of other things. My favorite way is to shred them and cook in butter with chopped onion. Low carb hash browns [emoji4] just time consuming to shred the little ones.

I do mine like home fries. Chop them up a little bit and pan fry them with some onion and they are great with bacon and eggs. Or throw some sausage or other meat in them and make like a hash and put your Ffried eggs right on top...so good

Made another yummy and simple casserole tonight. 2 large chicken breasts chopped up & mixed with 8 oz cream cheese, a small can of diced chiles, roasted garlic, cumin, salt & pepper then covered with monterey jack cheese. It was really filling and didn't even really need the side of herbed cauliflower rice.

Since I haven't been doing much cooking lately, I thought I would share some of the food choices I made in AC this weekend. They were not all perfect, and not having control over the ingredients is frustrating, but I did the best I could and didn't gain anything - YAY!

First night we grabbed dinner at the AC burger place in Harrahs. This is a Turkey BLTA
with no bread. The turkey was moist and delicious, there was plenty of bacon, and who doesn't love guacamole?

We also ordered pork belly cracklings. They were disgusting cubes of fat - YUCK!

We had breakfast at the Coastal Kitchen in Harrahs every morning. Service was pretty slow except the first day, but the food was very good. This was my bacon, swiss & tomato omelet with a side of avocado and no taters or bread. It was way too big to finish and delicious!

Second day I got bacon with poached eggs and a side of hollandaise that I put on the eggs. Delicious! They forgot to hold the taters, so I kept some of the onions for a little treat :)

I have a question. You guys on this keto diet are looking like you're shedding quite a few pounds. My problem is that I'm not really a meat eater and what's worse is, I'm not a fish eater, so if I just focus on veggies, salads, eggs, that type of thing, is that going to work? Now Bob is a meat eater, but he craves carbs big time. I think I can confine him to meats but what about snacks. What do you guys use for snacks that are filling? Is popcorn okay or is that a no-no? I'm so impressed with the things you're all cooking and it's obviously working for you.

Next night was the unbelievable spread at the wedding. I never saw so many keto friendly hors d’ouvres. Antipasto, scallops in bacon, shrimp scampi, chicken kabobs, and more, not to mention lots of other amazing food I had to skip but people were loving it all! I was having way too Much fun and totally forgot pictures until the entree.

I made up a way too big plate with slice roast turkey, some shrimp, Maria Nate’s mushrooms, tomatoes with mozzarella and chicken salad which is one of my favorite foods. The shrimp was a little slimy, so I didn’t eat that which was good since cocktail
Sauce is naughty. I’m so glad we ate since my flight was delayed (Shocker!!!) and I didn’t get home til Midnight. I wasn’t even hungry [emoji39]

So that’s my food story for the weekend

I belong to a couple of Keto Facebook groups, and in one of them nearly half of the members are also members of a Keto vegetarian group. You definitely don't have to eat meat to do this. But the thing about Keto is that contrary to what we were taught all our loves, you really need to incorporate fat into your diet. Eat avocado which has healthy fat, and don't be afraid of butter. If you do dairy, you can get fat and protein from adding cheese to tons of things.

On Keto, after you become fat adapted you find that you don't actually need snacks very often. But there are some days when a snack is required!! There are certain nuts that make great snacks. I am a macadamiaholic, myself. I have trained myself to like Pork rinds (I was chip junkie) and dip them in guacamole or salsa when I really need that crunch. When I crave sweet, I will eat a couple squares of Lily's chocolate, which is sweetened with erithrytol (a sugar alcohol) and Stevia, a natural sweetener. They are both very low on the glycemic index, so they don't spike your blood sugar, which is a big part of what we are looking for on keto.

Popcorn isn't keto, unfortunately. But, Keto is only one option! This is about healthy eating (and for some of us, losing weight) but whether low carb low fat, low calorie, or some other way of eating, we are here to talk about it all and to share ideas!

Eggs are a keto staple and cheese. Use high fat salad dressings to fill you up. Heavy whipping cream in your coffee. I always drank it black but that fills me up in the morning. I do intermittent fasting where I only eat during an 8 hour time span 11-7. There are so many recipes on Facebook, Pinterest and YouTube. This lifestyle is really popular right now.
You need to drink a lot of water. Once I cut out carbs I find myself not craving them anymore and I don’t snack anymore. The one thing that I still get too many carbs from is beer!

I thought you all looked great this weekend and sticking to the plan while traveling was very disciplined. Even though I am not doing 100% Keto, I have cut out all store bought carbs. I will eat the potatoes I grow, which when we got home yesterday, we dug out first plant, and had a few with dinner. Also the broccoli and cauliflower decided to grow up while I was gone so had some of that. I do like the butter and cream part of Keto!! This thread has been so good to follow and be inspired to eat better. Mark has lost 40 pounds since January!!

Michele you look fabulous! I am so envious of all the wonderful things you grow. I am planning to do tomatoes and jalapeños this summer so I can make my own salsa and have some yummies for my salads! I will also be growing some herbs, since I am such an amazing cook (NOT!). It will be awhile before we can do much up here, and it's going to be forever before the Farmer's Markets open, I am afraid. Nothing better than fresh from the garden produce and fresh eggs!

Thanks Chris. When I am out harvesting and cooking, I just wish I could share with all the Jokers that would love it!! Can't have a M&G here, no casinos in GA! I would so do a big farm picnic for everyone.

Mark's family has a place near Saratoga and they garden as well as the neighbors. Love that when my season is done, yours is starting and I get the best of both worlds!

Do you like cilantro with your salsa? Easy to grow if you do. I love it! Think it is a love or hate thing.

I just saw you cilantro question. I am one of the weird ones that can take it or leave it. But my son in Texas is of the "It tastes like soap" group, so I have never really incorporated it into cooking.

Laurie and Chris, when I saw how great you looked this past weekend, you really inspired me! So, I have been trying to do the Keto thing and actually like a lot of the food. My downfall, however, is potatoes, any way, shape or form! Since I came back on Sunday, I have been trying to do Keto friendly meals. I have done the Cauliflower mashed potatoes with cheese and bacon, eggs and bacon for breakfast, and have even made avocado deviled eggs, which I really like. I probably eat one avocado a day in some shape or form. Also, I did buy some a kale salad mixture at Costco and having been eating that with cottage cheese, tomatoes, avocado, mini cucumbers and sunflower seeds. Makes a great salad! This is a far cry from my potatoes and icecream, but I fgure that I will try it for a while and see if anything good happens! Also, had a pork chop the other night, and cut up the leftover to put in my salad. Love veggies and salads, so that is not a problem! One question.......if I want an alcoholic drink, what are some of the best Keto friendly drinks, or are there none? I need to watch sugar too......

Being that I was a former bodybuilder, I know how dieting can be frustrating.. What used to work for me back in the day was 6 small meals a day.. First meal of the day was a little protein but a lot of carbs. The rest of my meals throughout the day was all protein. I’d do this 5 days out of the week on top of 45 minutes cardio in the morning and weight training at night.. On the weekends, no working out and Saturday/Sunday would be my carb up day with little protein.. Like I said, back in the day it worked when I was 26, now that I’m 43, different story.. I think the best therapy is cutting back, no soda, moving around not just sitting all the time and having a positive attitude.. I used to be 248lbs now I only weigh 207lbs..

Yay Margie! Excellent start. You can find great recipes by just putting in some ingredients, like say chicken & cabbage and add kept in google, and you will be amazed what you will come up with!

I drink bourbon or whiskey on the rocks. Hard liquor generally has no carbs, except for things like Captain and of course, all of cordials. I also love coffee with Jamesons. If you make your own whipped cream with heavy whipped cream and something like Swerve you can even top it with whipped cream :smiley_simmons:

Well the pork belly is out of the oven and cooling. I snuck a piece off an end an it's delicious! We'll have plenty to put in the freezer.

The Keto pretzels turned into keto pretzel sticks instead of pretzels because the dough was too sticky and I lost patience. They are yummy though!

Instead of the ranch dressing I thought I'd try a new recipe for sesame dressing. It was horrible! Nothing I could do to save it so it went down the drain.

Up for tomorrow is tomahawk ribeye and jalapeño mashed cauliflower.

Mary the pork belly and pretzel sticks look fantastic! Probably good it was only the dressing that was a fail! I have found many, many fails since I started this way of eating and I am sure I will have many more....

The time has come. I'm finally ready to start getting healthy after multiple false starts over the last 3.5 years. What has become very clear to me is that I can control very little in my life. But the things I have 100% control over are my reactions to others and what I put on my mouth. I've conquered the 1st, but need major realignment in my performance in regards to the second. I just had this 'you must start now' moment yesterday and I'm 100% committed to being successful.

In the past, what's worked for me was high protein, low fat and moderate carb combined with liberal amounts of cardiovascular and very heavy weightlifting. This time Im going to choose the keto program for a variety of reasons. Number one being I've never tried it before and number two, the results seem to come quick.

I'm currently too unhealthy to embark on a rigid exercise plan. So I'm going to go the keto route and give it a try for 30 days.
I once did the first phase of South Beach for 30 days and lost 25 pounds without exercise. I'm guessing keto will have similar, if not better, results as the 1st phase of South Beach.

I've ordered an Instapot, and will be stocking up on all the keto staples after work Monday and will start the program May 1.*

Question.....any tips for eating keto for singles? It's hard shopping and cooking for 1 person without wasting food or getting bored of eating the same thing due to cooking in large portions for recipies.

Also, what happened if you found yourself in a situation where you ate a lot of carbs after doing keto for a month? Did you get sick? Just wondering what would potentially happen if I went a little off keto on a casino trip.

Finally, did anyone get grumpy with family, friends and coworkers? Kinda wanna be prepared for that!

Yes during keto 1st 2-3 weeks can become irritable easily

Start out with cutting out all sugar drinks as well and be sure to drink at least 100oz of water a day

I need to up my water as that's another big thing I've neglected and I know it's crucial to insure kidneys don't get fucked up in keto.

I never had any problems but I like broccoli and all veggies the only problem is it's hard to take a good dump.

One more thing..do any of you use an app to track your keto?

I spent the last 3 hours researching and planning and writing up a shopping list.

Then it hit me. Buying the right foods is a fine first step, but what meals will I eat? How will I know I'm on track. I'm such a stickler for doing things the right way, I need to track all this in a way that won't take 100% of my time.

I looked at the app store and found one app that has a shit ton of functionality. You can even scan bar codes to track your food.

I bought the 3 month plan for $15.99.

You don't have to pay for anything for the basic tracking functionality.

I'll let you know how it works.

There’s nothing like cooking meat on an open flame. Used garlic salt and pepper and oh my it was so good!

We made steak sandwiches with one and will be eating one tomorrow as steak and eggs for breakfast!

I agree about lifestyle change vs. diet.

Diet sounds temporary.

I like to use the term "program."

I look at this as starting a keto program that I will eventually modify to probably a Paleo program because keto is nut a good way to go if you're looking to exercise or do muscle building activities.

After watching "The Magic Pill", thinking keto is really the way to go. Had my Mom watch some segments of it to show her how it help aboriginal tribes, autisic children, people with asthma, people with diabetes, going to have her try to change. She will not change 100%. I can not change 100%. As much good stuff as I grow for this diet, I also grow potatoes and corn and will so enjoy the freshness and goodness of these crops. Already into the potatoes. Frying them in olive oil, boiling them, roasting them, etc.

Booked a trip to AC with my Mom June 12 - 15. Hope if she will try to change now, we will be in better shape. Not to say this may be her last "real" casino trip, just never know. Want her to feel the best as can be for it. She is super excited.

Cass it's easy take a photo with your iPad and post it just like you would with your phone and weight watchers is a good program. I have friends who have had good luck with it

That's why I don't think keto is sustainable for the long run. And it's certainly not possible to do cardiovascular and weight lifting while maintaining only 25g of net carbs a day. I, too, was very involved with weight lifting (taking creatine and l-arginine back in 1992) and our bodies needs certain nutrients to build muscle and maintain fat loss.

Interesting. I really like hearts of palm in salads. Seems like it's more similar to the texture of rice noodles than wheat pasta.

Very much a lifestyle change than a diet change. Gotta keep up the exercising after losing the weight. So many times I’ve stopped after hitting my goal only to gain it back

Yes, very much so.. Walking with my 72 year old Dad this summer for 7 miles a day 4/5 times a week played a huge role in my weight loss.. And it was great for my mind and spirit to be outside in the sunshine, fresh air, and spending time with my dad.. It’s all in our minds if we want to make it work..:) Good Luck!!

7 miles a day is great! And that’s terrific that you had that bonding time with your father. I just did 5.5 miles and my legs are like jello.

I’ve been walking every day for two weeks and I can already tell I’m happier. Damn endorphins. And you can’t discount how good a sunny day makes you feel!

I know I can’t do cardio right now because of my bad knees. But walking seems to be actually helping my knees feel better, so I’m hoping that soon I can start a more intense exercise regimen.

Yes, the endorphins do kick in..:) Once you make it routine and part of your everyday life, you look forward to it.. I know I do and I’m looking forward to my father’s return from Florida so we can start our walks again.. Want to really be down another 10–15lbs.. Already lost 40+ in the last 4 years but kept it off also and have not changed my eating or drinking habits..

Forgot a photo but made myself seared tuna with tomato vinaigrette and roasted cauliflower.

Tomatoes are probably a no-no but I can't give them up if I'm giving up simple carbs :)

Also have asparagus to roast this week and veggies to cut up for a Greek salad.

I didn't have any bacon but had real bacon pieces in the pantry so put mine in the oven with a toss of salt/pepper, EVOO, parmesan, and a tiny bit of shredded white sharp cheddar to keep the bacon in place. It was yummy.

Asparagus recipe.. deli ham, spread thin layer of cream cheese wrap around the asparagus, drizzle with olive oil and bake at 350 for 20 minutes.. the ham crisps up. The cheese melts and you can use it for an appetizer.. so yummy

Yes! Here is the whole recipe copied from beeflovingtexans.com

We used sirloin it was great but I will use better steak next time. When I went to put up the leftovers the plate was empty! My husband ate all of what was left while we cleaned the kitchen!

Ingredients

2-3 lb. Top Blade Roast, Flat Iron or Sirloin
¼ cup Worcerstershire sauce
¼ cup soy sauce
2 Tbsp. balsamic vinegar
¼ cup plus 2 Tbsp. honey
½ cup plus 2 Tbsp. bourbon
Spray oil
Salt to taste
Preparation

Cut beef into 1-inch cubes. If using Top Blade Roast, make sure to cut away and discard the thick membrane that runs through the middle of the roast.
Combine Worcestershire sauce, soy sauce, balsamic vinegar, ¼ cup honey, and ½ cup bourbon in a bowl or zip top bag. Add the steak tips and refrigerate overnight, or at least 4 hours.
Heat a heavy based or cast iron skillet to medium-high heat. Spray with a little oil.
Drain the excess marinade from steak tips and discard.
Place steak tips in the hot skillet. Cook 5-7 minutes until color develops.
Mix remaining bourbon and honey in a small bowl, then pour over steak tips to glaze. Continue cooking until glaze has caramelized and darkened to a rich brown color. The tips should have enough salt from the soy sauce, but you can taste them at this stage and add more salt if needed.
Remove from heat, allowing 2-3 minutes to cool, then serve.

We can buy beef tips already cut but they are usually chuck roast not steak. So we usually just cut our own unless it’s for stew. But sirloin is so hard to get really tender. I marinated 24 hours. I will definitely buy prime next time for this. Let us know how it turns out!

Mix remaining bourbon and honey in a small bowl, then pour over steak tips to glaze. Continue cooking until glaze has caramelized and darkened to a rich brown color. The tips should have enough salt from the soy sauce, but you can taste them at this stage and add more salt if needed.
Remove from heat, allowing 2-3 minutes to cool, then serve.

Forgot a photo but made myself seared tuna with tomato vinaigrette and roasted cauliflower.

Tomatoes are probably a no-no but I can't give them up if I'm giving up simple carbs :)

Also have asparagus to roast this week and veggies to cut up for a Greek salad.

I'm not an expert and I don't know for certain but tomatoes are a fruit and are sweet so they have some natural sugars in them. I'd imagine they are a higher-carb item than berries or veggies.

I made pizza with a ground beef and mozzarella crust. There are lots of recipes out there, even for the crockpot.

I browned and drained the beef (1pound) then mixed in about a cup of mozzarella. I spread it in the pan and pressed it down. Then added sauce , cheese and toppings. I baked at 375 for 15 min then turned up to 400 for 5, then under the broiler for 5.

I loved it and the crust held together pretty well.

Yes, Bill told me about this yesterday. I didn't think it was something he would even consider. So our plan is to try it out at Noodles (we have one just up the street) and if he likes it I will invest in a spiral slicer (or whatever it is called) and make some at home.

Grilled some shrimp to make low carb wraps for dinner. I put some celery, a little bit of tomatoes and lemon juice in my mayo for the sauce. These are the wraps I used. I did spare you the FAILS. Most notable was chicken cabbage carbonara. �� Followed closely by country spare ribs I cooked in the oven. Can you say dry and tasteless? But, it’s fun trying new things even though some inevitably suck. Good think Frank is a good sport!!

Air fryer chicken wings (we had a spinach salad too with bacon, egg, marinated onions and tomatoes).
I think chicken wings are definitely my favorite thing to make in the air fryer, only down side is quantity vs the oven. But they cook in less than half the time and are so crispy and juicy!

This one looks scary ( shoulda seen Frank’s face when I served it hehe) but it tasted good. Ground bison with onion in brown gravy ( a little cheaty) over broccoli cauliflower mash.

Mary, I need the recipes for the crackers and the ice cream. I was telling Frank yesterday that I am really craving crackers or something with texture to have with cheese or dips. I am pretty tired of chicharones. And that ice cream looks amazing!

You are so good about trying out new things. I am in a rut and need to get adventurous again.

Yeah, I have to keep mixing it up. There are hits and misses but I love puttering in the kitchen on the weekends.

I used 3 avocados and bumped up the cream and coconut milk a bit. Otherwise followed the recipe. I think next time I might try it with all cream and see how that works.

In this one I used the whole egg and I added a couple tbsp of sesame seeds. I used a sprinkle of smoked sea salt on top. I think it could use more seasoning in the next batch...maybe rosemary or onion and garlic powder or something but the recipe is good.

Here’s one more thing that was delicious. We always make jalapeño poppers using our farmer’s market peppers and local bacon and freeze them. We’ve always just cooked them in the oven but threw some in the smoker this weekend.

Not me. Way too much work! I buy mine and I prefer the Utz brand if you have them in your area.

I did get some really good ones when I was at Kansas City but they were a local brand and I have no idea what they were since I grabbed them at a gas station convenience store :)

Found these low carb wraps at Walmart by the eggs. They are good for a quick lunch. Filled it with ham, lettuce and guacamole

Those look great! Does it have the nutritional info on there? I can't find it on the product's website, and MyFitness Pal shows 0 carbs, FatSecret shows 13 and Fooducate shows 8. Talk about misinformation!

I’ve been offline for a few days so I’m trying to catch up. So if someone already posted these I apologize.

I finally ordered some Cut da Carb flatbreads. I’ve seen so many postings about them on Instagram and I wanted to try them. They are a bit pricy, but really just about a dollar or less per serving if you eat a whole one and they are big.
They are a very thin flatbread that just tastes like bread.

Only 9 net carbs per sheet and they are so versatile!

I will be using them for pizza,wraps,enchiladas etc etc. They are only available from their website but I hope they get into stores eventually. Oh and shipping is free!

Appetizer we tried at the lake. Cheese stick wrapped in bacon you have to freeze the cheese sticks first then fry in a little oil not cooked perfectly this time but will definitely try again
