Today's Texas style lunch. Probably not that healthy but it is very low on carbs

Made this zucchini on the grill sliced part way and put cheese and bacon bits between each slice. The cheese kind of melted out but still good since zucchini will be in abundance soon! Will make again

Everything was Really good

Laurie, I don't have a recipe, but I worked with a guy whose wife made stuffed zucchini boats. You just slice the long way, remove some meat and stuff each half. It solves the running out problem.
Also have seen them sandwiched when cut the long way. That works well with the small ones. Toothpicks hold them together while cooking. Can stuff with nearly anything.

Just one picture from the weekend. I'm trying to learn how to make my own salad dressings and I found a ranch dressing keeper. I didn't change a thing and it was delicious!

One of my Sparkfriends (CTYONIT) is keto-ing and tries a lot of recipes. She recently tried a lot of keto soft tortilla recipes to find one she likes, eliminating recipes with obscure ingredients or ending up with tortillas with the wrong texture. I thought I'd copy her hints and the recipe:

"Keto Connect is one of my favorite sites and they did not disappoint.
I have made them several times—first round following the recipe completely. Round two I switched up the seasoning for a garlic/rosemary deliciousness. Round three (today) Italian seasonings. Up and coming rye, then onto dill. Then I think I’ll branch out to cinnamon or chocolate???

Like most things there is a learning curve—but it is not much of a curve.
Just make sure:
it is a true nonstick pan
re-spray cooking oil in between tortillas.
Let it get almost dry on top and the edges begin to curl before turning.
No need to re- spray oil when flipping.
Cool them on a rack.

For my small skillet I used less than 1/4 cup per tortilla. I dry/heat them on an open flame before serving. They make great quesadillas.
Today‘s Italian seasonings ones were filled with dinner leftovers Chicken Pesto Alfredo. Delightful. "

Canned crab. We have some king crab in the freezer but it was too nice to use for crab cakes lol...I'll post the recipe when I get home tonight Foamy.

OMG, they look amazing! I made meatloaf yesterday using pork rinds and it was delicious, but I forgot to take a picture. Had it with mashed turnip, which was a nice change of pace. Pork rinds rule!!!

Here you go...

Crab Cakes

Blend together:

3 tsp worstachire
1 tsp black pepper
1 tsp dry mustard
1 tsp lemon juice
1/2 tsp Old Bay seasoning (i’ll Use a bit more next time)

Gently Fold in:

I'm totally trying this pork rind "breading" on something soon! My parents wrap everything in bacon (onions on the grill, mushrooms on the grill, kielbasa on the grill, cornish game hens, lol!) so I grew up a big fan of pork products. And oddly enough, a pseudo keto/atkins diet eater anyways given I was fed meat with a side of meat growing up.
nhcris, my dad has always wrapped his turkey meatloafs in bacon, it's SO GOOD! He tries to limit red meat.

Crab Cakes

I've been easing into this since Friday. I haven't done any calculations to see what my daily net carbs should be but have been very conscious of what I pick up in the store and reading labels now. For lunch this week I've prepared steak salad fixings for each day. Won't get tired of it as I love steak salads. Using Good Seasons (make it yourself) dressing, only 1 gram of carbs a serving. I plan to make mini quiche in my muffin pan for breakfasts each day this week. Had a roast and cauliflower mashed potatoes yesterday and I didn't go hungry. The mashed cauli was frozen and it was really, really runny! I have a recipe for homemade so will try that next and hope I get a thicker consistency. Biggest sacrifice will be my sweets because I have a huge sweet tooth but I'm going to give this a good try!

I don’t think so. Sunday we sliced it thin browned them on the flat top then melted Parmesan on each slice. It was good that way

I stuffed a pickled jalapeño with Mexican blend cheese mixed with whipped cream cheese. Then I wrapped it like an eggroll in a piece of Cut da Carb flat bread. I fried it in a little butter in a skillet (this seals the edges). It was great!

I made a sandwich out of mine (think someone posted this before here?) slice lengthwise then scoop out the seeds. I filled with ham, Swiss, avocado and mayo Yummy and filling. Yummmm! I could eat that whole bowl. I love cucumbers, Bill hates them. They were a staple in my house growing up. Mom always pickled them in a vinegar,sugar,water blend.
Pat will you please post the recipe here? I would love to try it (if even just for me).

Yummmm! Dad didn't like anything spicy so never any mustard seed or celery seed. He did like onions but not with his cukes. So when Dad would be out to sea Mom would add the onions to the cucumber salad. Oh the memories. Thanks for the recipe.

Im not sure if rice wine vinegar has sugar but it works great on quick pickle cukes.
Also love a greek salad with lots of cukes.

OG Mary, that all looks spectacular! I have never brined or smoked anything in my life, and I have to go look up 'Spatchcock'. It seems I need to add some new things to my repertoire. (I must admit, I also had to look up pepita - haha!)

Had a delicious filet with mushrooms and I made an avocado salad that was very good. My cousin brought one to the family reunion last weekend, and it was absolutely delicious but corn was one of the main ingredients. So I found a recipe that was a little different, and I really enjoyed it.

This looks delicious, I love avocados but as I am getting older I can’t stomach chewing steak anymore, it’s so weird because I used to love it. But your steak looks delicious!

It’s the weekend and as usual I’m puttering in the kitchen.

This is my experiment...low carb refrigerator pickles made with Swerve. I’ll let you know if it worked in a couple days.

I only do filet mignon now that I am old (and spoiled). I also can only eat small portions of it as steak is tough on my tummy. But I need the iron since I can't take iron supplements and there is only so much spinach I can stand!

FYI, rice wine vinegar definitely has sugars, most of what is commonly found in stores is “seasoned rice wine vinegar” which is essentially sweetened. I love it for quick pickles!
I made stuffed zucchini boats last night, we dug right in and forgot to take a picture until I was packing leftovers, lol! They were amazing!

They are! I’ll take pictures tomorrow, everything is soaked from the crazy storms that went through today. Was able to take pics of one of the gardens from the deck, it’s not squash, it’s gold zucchini! And corn, our first time growing it, we’ll see how it goes.

Thanks dvandentop, it’s all Adam! The garden plants are his babies! zeus, the corn is “sweet corn: farmers first hybrid” from Burpee seeds.
Since it’s our first time trying corn, we didn’t go fancy (and yes, love Silver Queen; there is a farm near us that sells it late summer that we always get some from).

Indeed, it is a small world. We used to buy Silver Queen on the mesa in Colorado. One summer we bought and delivered a burlap sack full to my wife's grandparents in Lufkin, TX. They deemed it the best
they ever et and renamed it Silver King. From that day forward we discussed Silver King and good it was. Sweet memories.

I don’t like zucchini B so I don’t make it but that’s what Adam’s mom does with zucchini we bring her, she freezes the loaves and has them through the winter.
I have ricotta and sausage so I might try to make a zucchini lasagna like the eggplant one above to use some up.

Have you tried Baja Bobs mixers? They are mostly 0 carb. I get them at our huge liquor store (Specs).
The mojito mix is my favorite. I don’t drink tequila but I’ve heard the margarita mix is good. You can also order them online.

Well I may just have to bring y’all some if I get to come to Council Bluffs!

Our local grocery store HEB also has really great flavored sparkling water. It’s sugar free but pretty sweet. The lime and lemon are great for mixing.

Back from a shaky week in Vegas (I wasn't terrible, but I sure wasn't as good as I planned), it was time to get back on track. But, Mitch was here when I got home, and his girlfriend came in the next night. My house has been full of young people coming and going! The good news is, they eat healthy even if they don't drink healthy haha!

Last night my son had a few friends over for dinner and they did all the cooking.

If we want hot and spicy pickles, we take a Serrano or two and slice it in half to add to the side of the jar before loading in the cukes!

I love that! The tannins from the grape leaves help keep the pickles firm. I love the idea of adding a Serrano to the mix...I wanted to try that once I had the recipe nailed down.

I don't own steam basket because we've never been big veggie eaters here but will get one now because I know boiling the cauli takes all the nutrients out. And didn't feel like digging for my food processor so just shoved it all in the blender, HHH. My kitchen was a mess! Your cauli rice looks good!

This is what I drink every morning- bulletproof coffee. There are a lot of different recipes I use one tbsp mct oil and 2 tbsp of heavy whipping cream in my coffee. I don’t have time to cook breakfast and this keeps me full till lunch and helps me get my fat grams for the day

Laurie that is awesome, keep it up!! I wish I could do keto but having ibs and lactose problems, keeps me away from the fats and dairy. I have been cutting my carbs but my diet is so boring, so sick of chicken breast, seafood, and veggies, lol.

I just ordered some of the MCT oil you use from Amazon. I know that fat makes you full and I know I need more fat and less protein in my diet. I lost weight initially but have plateaued like Serena and I want to lose more weight. I drink iced coffee in the morning, wonder if that'll work in it?

Thanks! I said if I just maintained during camping season then I would be happy and I have done that and still losing but slower.
I'm sure it will work in iced. I've seen people use one of those little handheld blenders to mix it in but I just stir it in my hot coffee.

Back from a shaky week in Vegas (I wasn't terrible, but I sure wasn't as good as I planned), it was time to get back on track. But, Mitch was here when I got home, and his girlfriend came in the next night. My house has been full of young people coming and going! The good news is, they eat healthy even if they don't drink healthy haha!

Last night my son had a few friends over for dinner and they did all the cooking.

There was borscht, a beautiful salad dressed with avocado & lime, roasted brussel sprouts, sautéed kale, yellow beans & asparagus, a tray of roasted vegetables with different flavor profiles (or so I was told :chuncky:) and free range sustainable pork shoulder and some spicy sausage. The pork & sausage came from his girlfriend's ranch.

Have you tried Baja Bobs mixers? They are mostly 0 carb. I get them at our huge liquor store (Specs).
The mojito mix is my favorite. I don’t drink tequila but I’ve heard the margarita mix is good. You can also order them online.

Kim--you heard correctly. I picked up Baha Bob's margarita sugar free mix today at Total Wine and More(the world's largest ls)((even bigger than Lucy's)).
It is so good. You cannot tell that it is sugar free. I will try the mojita mix next. Thanks for mentioning it. I've tried others that were not nearly as good.

So I went out today and bought some keto strips and am disappointed to find that I'm not in ketosis. I really haven't been counting carbs, but more like have been conscious of what I'm eating and trying to choose very low carb options.

Not doing any research hasn't helped since I found out today that the Atkins candies contain malitol which could actually kick you OUT of ketosis. Ugh, and they tasted sooo good!

I have lost about 3-4 pounds only and I'm sure that's more from cutting out the high sugar sweets and French fries rather than cutting back on carbs. Going to do more research but I guess it's just as simple as eating natural foods low in carbs!

Not really just looked at the labels and used the one that was lowest. Didn't put the whole jar on used like half. I always have HWC on hand. Think you could substitute spaghetti sauce.

Fried foods are tough, because wheat flour is a no-no. There are somethings you can substitute, but they really aren't as good. Here's one recipe I found using peanut flour. Low Carb Fried Green Tomatoes


Ingredients


3 medium green tomatoes
1/2 tsp salt
1 large egg
1 tbsp heavy cream
1/2 cup peanut flour (https://amzn.to/2Gkewkg) roasted and defatted
1 tbsp Cajun seasoning
1/4 cup olive oil





Slice the tomatoes into 1/2 inch slices and sprinkle with salt. Let sit 5 to 10 minutes.
In a small bowl, whisk together egg and heavy cream
In another small bowl, whisk together peanut flour and Cajun seasoning.
Heat oil in a large skillet over medium heat until shimmering. Dip each tomato slice into the egg wash, then dip into the peanut flour mixture, turning to coat evenly.
Fry tomato slices until browned and crisp, about 3 to 4 minutes per side. Remove and drain on a paper-towel lined plate. You will probably have to work in batches, depending on the size of your skillet.

I think our Farmer's Markets are similar. We have about the same number of vendors, but they are pushing maple syrup, jams and jellies (waaaah), wine and other things I try not to look at. But, the 4 or 5 veggie folks have some pretty nice stuff.

I love your farmers market haul Chris! My farmers market trips on Saturday morning is the favorite part of my week! I live in a small suburb and we only have maybe 15 vendors and only 4 farmers but their stuff is yummy!

I did a bunch of keto cooking and prepping this week. I made 4 quarts of refrigerator pickles, a pint of ranch dip, a pint of blue cheese dip and some keto bread. We smoked a couple pork shoulders yesterday and had pulled pork with mashed cauliflower last night. I’ll vacuum seal a bunch of the pork and freeze it for quick meals this winter. Leftovers for lunch were delicious!

I have the 3 hours test this Friday but regardless of whether I pass or not, I need to do low carb.

Nicely done Mary! The pork looks fantastic, and one f these days I will attempt some Keto bread. I would love to know your recipes for the dips. I enjoy a few chiccharones with dip when I am having a snack attack :)

I think our Farmer's Markets are similar. We have about the same number of vendors, but they are pushing maple syrup, jams and jellies (waaaah), wine and other things I try not to look at. But, the 4 or 5 veggie folks have some pretty nice stuff.

The flavor was fine. Maybe I should have cooked them a little longer but didn't want to burn them since I was taking them to the lake. Will definitely do again! Here's the recipe I used. Super easy and quick!

Hokey Moley, this was delicious and is definitely a keeper! Had it for late breakfast with sf maple syrup and sausage. Yummy!

Would love to smother one of the roasts in saurkraut but Bill hates it so I will just cook it on the side. That looks really yummy! Mayo and sour cream are fine on Keto. Those are the types of things that make this WOE work, IMO. We still get to eat rich tasting delicious foods and don't have to feel deprived. That is not to say that I'm not jealous of some of the amazing desserts and carbs things you guys post though!

Did some cooking yesterday. Usual egg cups for work breakfasts, chicken cordon bleu casserole, and tried a keto friendly pumpkin cheesecake squares recipe. Not too bad and low in net carbs.

I usually use Trader Joe’s riced cauliflower but HEB has these new varieties. I cooked the mixed one the sautéed it with some chopped rotisserie chicken. So it’s about 12 net carbs for the whole thing ( it’s says 6 per serving and there is 2g fiber) and it’s really good! I’ll try the broccoli and Parmesan later this week.

Yes!! We love love HEB and Central Market! I remember reading that you got to go them in San Antonio with you son. My new HEB is literally 5min from my house. We are very fortunate for sure!

I will definitely buy these again.

I have tried them! Jicama is almost tasteless raw and very crisp. So they break pretty easy when you fold them. I cut them into strips and fried them and I love the taste fried.
They are great on a salad that way.
Or you could fry them whole and use it like a tostado.

But to me they are a little pricey and not really worth the cost.

She was actually surprised that my numbers were so good, as she has a few other patients doing Keto that have had some issues. And the best part is that my health is better and maybe I'll stick around for awhile :) I'll check into the life insurance thing, and I'll have Frank look into it, too. I have been doing terrible and stress eating with finding out about my mother. As things get worse, sure it will go the other way, nothing like deaths and divorces to drop weight. All the traveling we have had this summer hasn't helped either. Have 3 more trips to do in the next 30 days...
