We’ve been going keto strong here. Down 2.5 lbs in 8 days. Steve is losing faster than me. Tonight I will shove a donut in his mouth [emoji48]

Here is our breakfast this morning

The wrapper has a slight hint of cardboard with a little egg. O carbs.

I saw those at Costco and wondered how they were.
I bought the bag of chili and salt Pork rinds from Costco to have as a snack when I want something crunchy and OMG it smelled disgusting when you pop open the bag! I was not prepared for it (not sure why since I’ve cooked skin on pork before and it’s reminiscent of that when raw). Be warned if anyone picks up the same snack, they smell bad but taste delightful!

Looks like I need to make a Costco run! There seem to be more and more Keto friendly products showing up there and at Aldi's.

I also tried to knock off Starbuck's Lemon pound Cake which is one of my weaknesses, especially when I travel.

I used lemon instead of vanilla flavoring, and I used monk fruit instead of Swerve. This was the closest thing to cake I have found by far! It was pretty tasty although my lemon glaze was overly sweet, so will be going back to the drawing board on that. I will definitely use the pound cake recipe again, and will try more variation.

Aldis had a zero carb bread for a while but it sold out every where. I couldn’t get it but heard it will be back in 2020 [emoji1695]
Have you tried the chaffles discussed here? They are good and easy to make. Lot of different recipes for them

I have yet to read a good review of any bread, unfortunately. Frank is low carb, and he eats the Joseph's flax low carb pita bread. Half of the bigger one is 3 carbs which isn't too bad. The little ones are 5 for a whole one. They are sold in supermarkets, and I am pretty sure they are everywhere.

There are also loads of low carb tortillas out there now. Good for rollups, breakfast sandwiches, and of course tacos, enchiladas and the like.

But as far as actual bread, not so much.

So.. I am jumping in hard now. Food prepped and shopped last night. Found some great salad kits with a total of 8 carbs including the dressing. Maid some pulled chicken with rotel, and I have meat for salads and tacos with Lettuce for shells.

Found a new canned drink I like. 100 calories.. no carbs or sugar.

Proud to report that we’re completing week 5 of keto and I am down 8 pounds. Keep having to remind myself it’s a marathon and not a sprint. Can someone please invent a magic skinny pill please?????

There were 3 types when I went to Ralph’s. I got the smaller of the 2 wheat. I think you have the bigger size.

These made me feel human again. Not like I’m crying over missing carbs, cuz I’m not, but it allows variety in food.

Our go to meals:

Bagged Caesar salad and a protein
Meatballs, Raos pasta sauce over spaghetti squash or zucchini noodles
Cauliflower fried rice with chicken or shrimp
Lettuce wraps with chicken or tuna salad
Taco salad without the shell

So far so good for me...I’ve lost 18 pounds since October.

Steak, pork chops, marinated pork or turkey tenderloins, cheese burgers wrapped in lettuce or Chaffle bun, taco salad use low carb strips on top for crunch, omelettes, salads, cauliflower, Brussel sprouts, broccoli for veggies chicken fajitas, precooked sausages so many options! Watch keto YouTube channels or follow keto Facebook page. I also find new recipes on Pinterest

As I mentioned in the weekend thread, I tried to recreate the Starbucks roasted pepper egg white bites.

I ended up combining a couple recipes and techniques so I’ll just list what I did. I found it a little too rich so next time, I will use less cream cheese and cheese.

1.5 cups pasteurized egg whites
3/4 cup cottage cheese
3/4 cup cream cheese (I used whipped and will decrease to 1/2 cup next time)
1/3-1/2 cup finely diced roasted red peppers
2 teaspoons finely diced green onion
1/3 cup finely chopped frozen spinach
Handful of Colby jack shredded cheese
Couple dashed Tabasco
Garlic powder, salt and pepper

I bought a silicone egg bite (or baby food) mold on Amazon. Preheat the oven to 325F.

Combined egg whites, cottage cheese and cream cheese with immersion blender until combined and frothy. Added everything else in and poured into egg mold. Put egg mold in 9x9 baking pan and added water to the pan. Baked for an hour.

You can probably cook them at a higher temp and without the water bath, so it cooks more quickly but I was trying to recreate the sous vide effect.

Next time I make them I’ll tinker with the recipe and will report back!

It does look good, and the ingredients sound promising. I don't like peanut butter cake, so it won't be me but hopefully someone will try it!

I was at a sushi place and asked for a spicy tuna roll without rice. It was good! I didn’t miss the rice at all!

That gave an idea. Instead of using the low carb tortilla, I decided to use nori/seaweed as a wrap. This morning I put egg salad in one and it was good!

I thought I'd bring this thread back up -- not necessarily in terms of low carb but also as a reminder to make healthy choices -- as I suspect I'm not the only one who's noshing more and craving comfort food and adult beverages these days. (Also, my DH has discovered that Justin's Vanilla Almond Butter doesn't taste anything like the nut butters he remembers from the hippified days...there goes my secret stash!)

I am still here trying to make good choices, but damn it is hard these days with nothing much else to do. Plus Frank had to get off Keto on doctor’s orders, so there are way more temptations in the house than before. Not to mention giving up the cigarettes makes it a bit tougher. But I am still Plugging along ...,

I did make a really good casserole today. Frank broke into it before I took a good picture, but I got one of my portion. It’s very similar to artichoke spinach dip and quite delicious!

I went back to drinking my Super Beets in the afternoon. It's interesting how it makes you feel energetic but not shaky. Kind of clears your mind as well. DH and I went for a car ride today around the neighborhood. It's strangely quiet with the courses closed.

Time to get back to keto! Forgot to take pic of last few meals so will start with today's breakfast. Avocado on everything bagel seasoning. Also added some of the seasoning to the avocado along with a bit of fresh lime juice. Not a huge fan of avocado but this isn't bad and healthy too. Tapatalk not letting me post pics.

Didn't use to like avocado unless it was guacamole. But then I got hooked. I eat too many. I like them sliced (not too ripe) on a piece of toast or Wasa cracker with a little cream cheese. Yummmm. Or add a slice in my taco/fajita. Yummm

Has anyone else noticed spices are hard to find on the shelves? It’s a weird thing to have shortages on, but for a month or so the spice section at all of my local grocery stores as been decimated.

Yes spices and seasonings are hard to get here. I only do food delivery orders from pea pod and a local pork store, Im hoping my order tomorrow is good. Yeast is a hard to find item here also. Lot of people are baking, not me lol!

Their spice aisle was well stocked and Ida, I was able to find that garlic, ranch, and chive blend!

This was a super exciting find in the Mexican aisle. Different flavored chicharrones for $1.29 a bag! And then, already ground pork rinds! I mean I know I can do it myself but anything that saves me a few minutes, I’m all for.


I’m learning to check out the Asian, Mexican and other specialty aisles to find keto friendly products that aren’t as mainstream!

Since I had a huge salad for lunch, decided just to make a small batch of jalapeño popper chicken. presentation gets an F because I forgot about it in the oven but it tastes pretty good! And an open face ice cream sandwich. Enlightened keto peanut butter fudge ice cream on a chocolate chaffle with crushed peanuts. I found a new pasta that is low carb and the most like real pasta of anything we’ve tried.

It’s not inexpensive. A bag has 3 to 4 servings in it. It’s made of lupin flour and pea protein. The flavor is good. The texture is a little grainy but not bad. You boil it like you would any other pasta. I will for sure order it again.

It’s still alive! The basil, strawberry, mint, and passion fruit are all producing well. Having a hard time with pomegranate and dragon fruit- not producing at all! I have carrots and jalapeños growing too.

I’ve been eating a lot of tacos. I eat 1 taco - low carb tortilla, carbs asada meat, onion, cilantro, hot sauce- for lunch and dinner. I buy the flap meat from Costco and marinate and grill it and store it in the fridge so I always have that as an option. It’s nice because it’s one less thing to think about.

But lately I’ve been taco-ed out [emoji23] I ate tacos everyday for about 4-5 months.

I keep keto burritos (hey that rhymes[emoji1787]) in my rotation and as well as keto fried chicken strips and lately have been making a jalapeño popper chicken casserole. Definitely have to always be prepared with keto friendly foods on hand. Sadly, my downfall is when I go away, it takes a week or two for me to decide to get back to it!

I love Mexican food, and lots of it translates pretty well to low carb. don't know what flap meat is, but next time I am in Costco I will look. Then I will bug you for your marinade info HHH!

Pan seared halibut with Lemon butter caper sauce and a side of savory cauliflower mash. Absolutely delicious! The halibut was from Costco, and I was really impressed with it.

I love this thread! Adam and I tend to drink our carbs rather than eating them. Tonight’s dinner was air fryer hot chicken (had two pieces each, hhh) and cauliflower steaks. App was a cucumber from the garden and we had some leftover stir fry garden veggies with rice which I tried to crop since rice is bad, lol. And and IPA!

As someone who never ate cauliflower, I love these. We do them in a 425 oven. Rub with olive oil and I use my favorite steak seasoning on it. It’s one from Omaha steaks, apply liberally. Roast for about 13 mins, then flip for another 8-12. The char actually happens on the bottom of the cauliflower so if you don’t flip, that side will get nice and toasty while the other just bakes.

I’ve even topped them with creamy cheesey Swiss chard as a sauce of sorts.

One of the reasons I love when people post links. We all have different tastes and likes/dislikes. I just couldn't get into chaffles as much as I wanted to and despite liking the ingredients. Tried several different recipes for them too. I have been liking recipes more on the spicier side lately. I used to love spicy food, but had reflux so bad I couldn't tolerate it. The weight loss has improved that greatly to where I rarely need to take Prilosec anymore, which I'm grateful for.

But now I make an "everything bagel" chaffle that tastes a lot like the real thing. I use this seasoning (experiment with how much or how little...I give it at least 3-4 shakes), half cup of mozzarella, and one egg which makes 2 chaffles. I get it at Walmart or Sam's but I think there are other brands out there too.

Also, I like this chocolate chaffle recipe because it uses cream cheese. I usually add a little bit of extra monk fruit and a tiny bit more vanilla. Congrats on the improvement with the reflux!

Highly recommend Swerve Brown Sugar as a replacement. Cooked some apples and pears with it and some spices and it’s delicious. Had the same texture as brown sugar too.

Been trying to eat as much of our garden as possible. Zucchini noodles in cream sauce with fresh tomato eggplant olive and pepper sauce topped with shrimp. Grew everything but cream, olive and shrimp.

Tonight was grilled okra and Japanese eggplant, over arugula avocado salad with homemade jalapeño, shallot, lime vinaigrette topped with shrimp.
Adam grew some sort of less slimy okra that is delicious!!!

So this is my new favorite section! I’ve been living the Keto lifestyle for about a year and a half now. Total stall/plateau for the last 6 months or so but it’s kicked into high high gear again. Total, I’m down 70 pounds as of today and the goal weight is 30 more. I can’t wait to stroll through all this great low carb goodness!

And yes, I will be cheating in KC but a 24 hour IF and I’m right back at it!

So after my trip to Boston I was given permission to start losing all the drug weight I gained initially. From start to end I took on close to 40lbs. While I definitely could have used some of it, I’d like to give back about half. Starting slowly with a semi no carb diet. Lunch was chicken, riced cauliflower and peppers. I added soy sauce and a small amount of buffalo sauce for a kick. Delicious!

Breakfast was 4 eggs with bacon.

I am making Sunday my official cheat day, but chicken nuggets aren’t ruled out anytime. I just want to make small changes and see what happens! Something I will stick with and not get discouraged.

I'm so many kings! Seriously though, I'm finding well seasoned air fried veggies are where it's at. I did good today so far! Bought some spicy pickles and string cheese for evening snacking. I'm finding the lack of carbs is turning me almost into a pregant woman with cravings..Haha When I did P90X like 10 years ago I was the same thing. You could almost see a 6 pack then! ALMOST, lets not get carried away!

Has anybody tried these? They're at Costco. I'm not a fan of the Shirataki noodles (can't get past the smell -- no matter how much I rinse them -- and the texture), but one of my Sparkfriends says these taste like regular noodles.

Sorry not a pic of mine but we devoured it before I thought about it. Made this last night "Pico de Gallo Chicken." Very easy and was so good. I made the pico (I did add some minced garlic) and used some pepper/jack and mozz cheeses for the top. I intended to make it with skinless boneless but I had grabbed a rotisserie chicken at the store, so just took all the meat off and put it on my Pampered Chef baking stone and it worked great.
