I have been doing terrible and stress eating with finding out about my mother. As things get worse, sure it will go the other way, nothing like deaths and divorces to drop weight. All the traveling we have had this summer hasn't helped either. Have 3 more trips to do in the next 30 days...

I have been thinking so much about you, and I really admire the way you are handling things with your Mom. What you eat should be the least of your concerns. Just continue to make each day special for your Mom :love_heart:

So I have been doing this Way of Eating for nearly a year now, and I visited my doctor today to check on things. Well, all of my tests were perfect! She was actually surprised that my numbers were so good, as she has a few other patients doing Keto that have had some issues. But she is very pleased with both the amount of weight I have lost in this amount of time, and the results of all my tests. She even asked for some pointers HHH

So, I am officially 60 pounds down and continuing on my journey. KETO ON!

Wow! That is so awesome! You have really embraced this! I’ve been so inspired by this thread to get back on track so many great successes on here are really helping!

Congratulations ! You have really done it right!

Those look really good! I have been disappointed with most 'bread' recipes I have tried, but they always look so good when you make them. I might give that one a shot, but I think I need to buy psyllium husk, whatever the hell is!

Thanks ! I have always baked bread, rolls,kolaches etc. but I agree that most keto breads disappoint. But texture wise this one is pretty good.

The cheese breads like what Laurie posted are definitely tastier.

Psyllium husk is pure fiber. It’s In Metamucil and other supplements. It’s great for your heart too. I used powdered husks but I think you can also use coaster ground ones.

Some impressive weight loss numbers for the low-carb/Keto group, for sure, and very motivating to someone like me who has been in plateau range for what seems like forever. And not dreading stepping on the scale at the doctor's office must have felt really good!

The psyllium kinda high for sure. That’s one reason I was hesitant to try this bread. 12 oz was about 10$ and you use 5 Tbls for that recipe. So its could be a deciding factor for me. I did see it a bit cheaper on Netrition.com. I used to order from them way back when I started low carb. They have good prices and a set shipping rate per order.

Almond flour can be expensive too. I’ve found the best buy at Costco for sure. I use it for my little chocolate cake I love so much so I stock up when they have it.

Okra is awesome grilled too. No slime, just goodness. People that don't like okra, love it roasted or grilled. Olive oil, s&p and sometimes I do a little cayenne.

That looks damn good! I have never made a brisket, but I probably should. Not sure I have ever seen anything called brisket in my supermarkets. Does it go by another name?

Ask your meat man. Beef brisket. Only buy one that will fit in slow cooker. Sometimes they have a whole side in the vacuum packs. Put on high for six hours with a jar of pepperoncini. Then when done, shred it up and pour juice over it. Brisket is also cook for Jewish holidays. And we had brisket in KC ay Q39!

Thanks for offering Laurie! I use white rum with the Mojito. I don’t drink tequila at all so the Margaritas will be whatever anyone wants. I make whiskey sours and amaretto sours with the sweet and sour mixer ( I use my homemade sugar free amaretto). I might bring some liquor too since it looks like Doug is coming and we will have extra room. Our Spec’s also has the best selection of airline size bottles I have ever seen. So who knows what will be in my bag!?

Since TSA only lets you check unopened bottles, I will leave whatever I bring with y’all that are driving.

Thanks! I planned on bringing a few Chomps beef sticks and smoked almonds from Trader Joe’s. I hadn’t really thought about anything else except my HEB brand liquid Splenda for my coffee. I bet you will have some good ideas!

Salsa Verde Chicken Casserole. Remembered it from last winter and tried again with a couple tweaks. Pretty tasty. Frank had his with grape tomatoes on the side, but I am stalled again so none for me.

Ok jumping in...been following along for awhile and really enjoying everyone's food porn and results. I have totally changed my eating (for many reasons), tomorrow will be one month that I've been eating keto. I weighed myself on October 21st and lost 17 lbs. since being on keto since October 2. I will check my weight in another week or two, but noticing good changes. I'm not cooking fancy...just basic keto food and doing 18/6 IF right now till I get the hang of it. No fat bombs or desserts. Although I was really craving pancakes so I made them keto/sugar free syrup/peanut butter and it really hit the spot. Thank you to Chris for all the tips. Thanks Laurie, I used this recipe.
2/3 cup almond flour
2 ounces cream cheese (softened)
2 eggs
1 teaspoon baking powder
1/2 teaspoon stevia (I leave out)
1 teaspoon vanilla extract
Mix, refrigerate for 5 mins while pan is heating...helps the pancakes to fluff-I added a little cinnamon in batter and topped it with peanut butter. But I want to add some wild blueberries. And that made two good size pancakes...I ate it all! :D

We tried cauliflower pizza crust today from Trader Joe’s. We don’t eat lots of carbs in general and figured we’d give it a shot.
It does NOT replace the craving for pizza, hhh! It was good (but only if you like cauliflower to begin with), and very crispy, but not like pizza.
You’ve been warned!
Also, crust box said this is SIX servings?!?
We had basil balsamic glazed mozzarella, tomatoes, prosciutto, and arugula salad topper.
We were still starving afterwards so I made a charcuterie platter too. Lol

Thank you Chris, I was giving myself 30 days to see how I did. I'm quite pleased with how I'm feeling after 30 days ...I'm going to keep going. As far as cooking, thank you for that compliment...however I'm not feeling very innovative lately. Getting to learn more about keto friendly ingredients and this thread really inspired me.

Ok, I have not drank being on low carb...but have heard the warnings that your tolerance is lower and hangovers can be brutal. Not a beer or wine drinker and really not into straight up alcohol. So if I can only have one or two I want to really enjoy it. I'm more into Margarita's, Chocolate Martini's, Lemon Drop's, Mojito's...stuff like that. Anyone have any low carb recipes for those type of drinks or any other drink you think is delicious? I seen this White Christmas Margarita and think it could be low carb by switching triple sec for a little orange extract, and a sugar free rim.

8 oz. triple sec
1/2 c. lime juice
2 c. ice
1/2 c. Mint, for garnish

I’m so sorry I didn’t get to CB with Baja Bobs margarita mix. It’s here in my bar cabinet ! I guess my girls will drink it at Christmas. Hope you find something you like!

Try mixing that with Sprite Zero my favorite. Also some lacroix flavors are good and desani makes a sparkling lime that I really like. BK (before keto) Malibu coconut rum was my favorite but it has too many carbs so cherry vodka is my current choice. Just google the carbs some vodkas are high too.

Could be from sweets too as too many good desserts and treats at the slot tourney or meals

Same with alcohol/ horrible hangovers...I was fine but stayed keto friendly drinks . I'm going away in a couple weeks and I know I will most likely eat stuff not allowed on keto. I was worried about being sick on vacation if I cheated. Which is weird, because I am in ketosis, I'm not getting a lot of cravings or horrible hunger. I'm losing weight, I feel really good, great mental clarity and a lot of inflammation has left. Yet I'm thinking of cheating- WTF??! Yes, holidays will be a struggle and hope you're able to limit your cheats so you don't reverse all the positive you achieved from changing your WOE.

I haven't been hardcore keto in a while but I remember when I finally took a first trip after no alcohol for like 2 months got drunk really easy so take it slow the first vacation ;)


Holidays is the hardest since so many good food we all know and love the biggest things to stay away from are sweets they will make ya hold onto water weight more Imho

One of our camping friends has problems when he cheats but he has a sensitive stomach to begin with HHH hasn't bothered foamy or I but I usually keep my cheats to one item meaning don't go crazy. I do get drunk easier but not worse hangovers so I guess everyone is different!

Last night we had dinner at Canaletto, the Italian restaurant onboard. You would have thought I won a handpay I was so excited when I saw that they had zucchini spaghetti!! We had a great dinner and behaved fairly well.

I have done an Atkins style diet a few times. In college, when I was doing one, and hadn't eaten much that day, I got super sick drinking rum and diet cokes. So it does happen!

It's completely true about the sluggishness and hunger when you cheat so it's not just a myth that low carb gives you more energy and evens out your hunger pangs, I am feeling the difference now. Can't believe how I rarely felt hungry on keto and now all I think about is my next meal! Definitely know it's something I need to start back to but this has been a hell week at work and it's too damn cold to go out to the store to restock with smart choices.

Jackpot on the scale this morning I have lost 9.4 lb since getting back from Vegas.

Our Second Keto Thanksgiving worked out okay. Luckily, Whole Foods was open this morning, so I was able to pick up a fresh turkey and some decent stuff for sides. I was happy because our other option was scrambled eggs since our cupboards are pretty bare after vacation! I did have to keep it simple though, since I had no time to prep ahead.

Well, I don't know how or why, but I came home even!! That is quite a miracle really. I am getting right back on the plan though, and hopefully I did shake up my metabolism a bit, since I have been stuck for weeks and weeks.

I have terrible luck with Xantham gum. I just can't get the texture right, and I guess I always use too much as it turns into a gloppy gooey hideous mess. I just used some heavy cream and cream cheese. It would have worked better if I had less liquid, but it tasted rich and creamy. Last night I made a sort of turkey ala king with what was left of it, and it thickens up nicely when I added some shredded cheese haha!

I just made these yummy cheese crisps. I have made them for years but these turned out perfect.

I used Tillamook medium cheddar from Costco. 80 seconds in the microwave. Let cool a bit and crunch!

The chocolate cake is a basic mug cake with a few tweaks that make it my favorite. I will edit this when I get home to add a pic of the microwave thingy I cook them in. I measure out all the dry ingredients into jars ahead of time so that it just takes a minute to put it together. I hate getting all that stuff out every time. I usually have 4 or 5 jars ready in my fridge (like little cake mixes)

Chocolate cake

For 2 servings

4 T butter
4 T almond flour
4 T cocoa
3 T Swerve (2 if confectioners)
2 t coconut flour
2 t ground golden flax seed
1 t baking powder ½ tsp for denser cake
2 eggs. Or 6 Tbl Real Egg (for less eggy taste)
½ t vanilla
Liquid Splenda to taste

Melt butter (barely)
Stir in a squirt of liquid Splenda
Dump in all dry ingredients
Stir in egg
Divide into 2 dishes
Microwave 55 -60 seconds

It’s really simple if you have the dry ingredients pre measured.

I just broke my fast with this drink. OMG was so good, a girly delicious alcohol treat for sure!!! I found a recipe online and just adapted to my liking. 1 cup of unsweetened almond milk, about 3 tbsp. heavy whipping cream, 1/4 tsp cinnamon, 1/4 tsp grated nutmeg, 1/2 tsp. vanilla. 1 good tsp. swerve or other sweetener, 5 ice cubes...blend well then add vodka and mix for a second. drizzle chocolate in cup and nutmeg on top when poured. Enjoy. Ohhh the possibilities- banana extract with the chocolate. I'm starting to really LOVE Keto!! I've lost 20lbs but I'm sure I could of lost more if I didn't love stuff like this. 8289

There is a ton of information on the internet. I would just limit my carbs to 20-30 grams a day to start. I track my food on an app on my phone called Lose-it. It has a My Day tab that keeps track of calories and nutrients by fat, carbs and protein grams. Also tracks activity. You need 70% fat, 25% protein, 5% carbs in your daily food intake. It's not the most accurate but it's free and can get you close. Think there are other apps that do this too.
Make sure you keep your electrolytes up because some people get headaches when first withdrawing from carbs.
If you have Pinterest there are charts there that list the carbs in foods and which are keto friendly. I get recipes there too. Also tons of YouTube channels with great advice and recipes. Also pages with great recipes on facebook. I can share some of my favorites if you are interested let me know I will send them to you. It's okay to have "cheat" meals/days once in a while just get right back on it.
That is what has worked for me. If you have any questions you can post them here.

JANUARY 2019: Bloody Maria

Tired of the traditional Bloody Mary? Try it with a twist! Instead of vodka, Bloody Maria is made with tequila and Mexican beer, and it’s the perfect pour for tailgating or watching the game.


Bloody Maria cocktail


INGREDIENTS
4 oz. Bloody Mary mix
1 oz. blanco tequila
3 oz. Mexican beer
1⁄2 oz. lime juice
Bloody Mary rimmer
Your favorite Bloody Mary garnishes (e.g., olives, pickled vegetables, jalapeños, etc.)
Hot sauce (optional)

DIRECTIONS

Wet the rim of your glass with a lime wedge or water, then dip glass into rimmer. Fill glass with ice and pour in Bloody Mary mix, lime juice, tequila and Mexican beer. Add hot sauce to taste, if desired. Stir well, then garnish with your favorite Bloody Mary toppings.

There is new research out that tequila is the only alcohol that will not jack your blood sugar. The human body cannot break down the sugar from agave so it discards it. No, I'm not kidding.

Yeah 8 bananas sounds a little crazy but is probably to help keep potassium level up. I would.say drink a full powerade zero 32 oz to keep up potassium level if doing the diet attached to it
I am gonna eat it til gone and follow and see if can get down to pre.holidays weight. Only a few lbs here but always good to get back on track.

Spent the afternoon cooking. I had a whole turkey breast I cooked and hadn’t used, and 3 pounds of ground beef to use up. Looks like a comfort food kind of weekend coming.

Macadamia meatloaf.

We had the meatloaf for dinner. Picture is ugly, but it was delicious! Will definitely make it again. Here's the recipe.

MACADAMIA MEATLOAF
(8 Servings)
INGREDIENTS:
Veggies:
2 oz. Mushroom
1 oz. Cauliflower
1 oz. Chopped Onion
Meat:
1 lb. 80% Ground Beef
1 TBSP seasoning (no sugar)
½ tsp. Pink Sea Salt
½ tsp. Pepper
4 oz. Cheddar Cheese, cubed, (no carb)
Batter:
3 oz. Macadamia Nuts
2 Large Eggs
3 oz. Carb Free Ketchup
DIRECTIONS:
1. “Rice” the mushrooms, cauliflower, and onion in food processor.
2. Blend the macadamia nuts, eggs, and carb free ketchup into a batter.
3. Mix together with the ground beef, cheese, and seasoning
4. Bake at 350° in an 8X4 loaf pan for 45 minutes.
5. Alternately, bake for 30 minutes. Grate the cheddar cheese and sprinkle on top.
6. Bake for 15 more minutes or until cheese is slightly browned.
1 Serving (⅛ of loaf)
Calories: 300
Fat: 25.6g (77%)
Protein: 15.2g (20%)
Carbs: 2.3g (3%)
(Fiber: 1.0g)
(Net Carbs: 1.3g)

I got adventurous today and made Keto donuts. The icing was too sweet for me, but we loved the donuts themselves. I’ll try a chocolate ganache topping next time. Yep.. Cassie has an amazing house.. outlets pop up out of the counter, wave you hand under the faucet and it turns on or off. Sheila and I are both single (Sheila is a Commander on the gang unit for St Paul MN) and we decided we were moving in when the kids went to college. Part of the day was like watch CSI as Sheila took calls on a Gang murder in St Paul.

I have chopped it fine and added it to turkey taco meat to add texture (so good that way), but we’ve typically eaten it raw.

I just used salt and pepper, but some recipes suggested garlic powder or smoked paprika. I just tossed them with olive oil, salt and pepper and threw them in the air fryer. They are a little reminiscent of sweet potato fries because of the natural sweetness but a little crunchier in the middle. I really liked them, but then I haven't had fries in forever!

I never thought of using it for texture. Might work in meatloaf or meatballs, too. Great idea!

I ended up not getting the air fryer. I’ve never been a frying sort of person and it takes up so much space that I just didn’t think it was for me. Instead I got a couple different kitchen toys.

The pork roast was perfectly cooked. Excellent flavor. Yesterday I made these eggs bites for breakfasts for the week. Eggs, cottage cheese and spices. These are yummy and so easy.

Just out of curiosity, how much has everyone lost on this keto diet? Alvin and I started a little over two weeks ago, I’ve lost 5 pounds and he’s lost 10. We are pretty strict with our food but still drink red wine every now and again.

Just out of curiosity, how much has everyone lost on this keto diet? Alvin and I started a little over two weeks ago, I’ve lost 5 pounds and he’s lost 10. We are pretty strict with our food but still drink red wine every now and again.

These food pics are amazing. I love the variety of recipes. The results you're all experiencing are fantastic. A few weeks ago, we borrowed a sous vide setup from a friend and my guys were cooking everything in it, but mostly steaks and such. They put a little sear on them at the end for color, but they loved everything they tried, cooked perfectly.

That's a great start for you and Alvin, Lacey!

I am at 69 pounds down after 14 months. The losing has definitely slowed, and there have been way too many fun trips & cruises. But this way of eating is sustainable and even enjoyable for me, as long as I allow myself some flexibility. Things like wine are not things I am willing to give up, so in my version of this WOE, it is allowed! When I get frustrated, I just have to keep reminding myself that it's not a race and I am making progress. I will continue my slow journey.

Spent the afternoon cooking. I had a whole turkey breast I cooked and hadn’t used, and 3 pounds of ground beef to use up. Looks like a comfort food kind of weekend coming.

Bacon Cheeseburger Casserole
Macadamia meatloaf.

We had the meatloaf for dinner. Picture is ugly, but it was delicious! Will definitely make it again. Here's the recipe.

MACADAMIA MEATLOAF
(8 Servings)
INGREDIENTS:
Veggies:
2 oz. Mushroom
1 oz. Cauliflower
1 oz. Chopped Onion
Meat:
1 lb. 80% Ground Beef
1 TBSP seasoning (no sugar)
½ tsp. Pink Sea Salt
½ tsp. Pepper
4 oz. Cheddar Cheese, cubed, (no carb)
Batter:
3 oz. Macadamia Nuts
2 Large Eggs
3 oz. Carb Free Ketchup
DIRECTIONS:
1. “Rice” the mushrooms, cauliflower, and onion in food processor.
2. Blend the macadamia nuts, eggs, and carb free ketchup into a batter.
3. Mix together with the ground beef, cheese, and seasoning
4. Bake at 350° in an 8X4 loaf pan for 45 minutes.
5. Alternately, bake for 30 minutes. Grate the cheddar cheese and sprinkle on top.
6. Bake for 15 more minutes or until cheese is slightly browned.
1 Serving (⅛ of loaf)
Calories: 300
Fat: 25.6g (77%)
Protein: 15.2g (20%)
Carbs: 2.3g (3%)
(Fiber: 1.0g)
(Net Carbs: 1.3g)

I started on the Keto diet on New Years day when I weighed in at 300 pounds! I was doing really great and was down 22 pounds in only 5 weeks. I weighed 278 last Sat morning and weighed in this morning at 290. Yikes, 12 pounds gained in four days!

But boy was that fresh baked bread good at 37 Steak House! Plus the fried chicken and mashed potatoes and mac and cheese and 4 deserts at the buffet! And all that food at Q39! Plus all those deep fried snacks at Winning Streak. And All those Big Macs, fries, and chocolate shakes I ate on the way home yesterday.

Maybe I had just a "few" too many carbs lol

I ran them through the food processor til they were sort of a coarse grind. I made a different meatloaf last week, and it wasn't nearly as good as this one.

I forgot about all the added calories that I drank during this trip. The two bottles of Crown had lots of calories but no carbs, but I also had a WHOLE bunch of Baily's Irish Cream drinks which are LOADED with carbs. I had it in my coffees every morning and also a few glasses on the rocks each day. I think I had WAY too much on this trip lol

I usually do 16/8 or a little better, but I am hoping the extra couple hours helps kick start it. I need a quick WHOOSH! Just had a nice keto breakfast, so it is back on!!

Impossible to drive to the store here because of our ice storm, and I couldn't find a thing in the house that was Keto friendly.

I did find a pound of ground beef in the back of the freezer and thawed it out. Couldn't find anything to eat with it so I made a one pound cheeseburger with no bun and no toppings.

LMAO, at least I'm full now and hopefully that's all I'll eat today. :)

Feels good. The truth is my whole life I've been a fit athletic dude - then about 7 years ago started having kids and took over a business - ran out of time and ran up the stress. Ate more in my car then at my dinner table.
Have another 30 lbs to go for pre kid weight. Hardest part of all of this is no carbs. I have surprisingly not missed sugar but man, i could go down on a bun right now!

Strangely the long periods between haven't bugged me too much, especially if i am at work or busy. A few times I fell short as i came home and started wandering around the kitchen. Fucking kitchen

The only carbs I have had is from green beans and cottage cheese.

Guess I will have to cut down on calories too, because eating three 16 oz rib-eyes a day is not working well and is expensive as hell!

I don’t know I’ve seen it before either a small producer or import beef that has not been graded by the USDA as prime or whatever I’m guessing but we bought them a lot and they taste good. Hhh

I had to look it up. Federal law requires that meat be inspected, but not graded. Producers pay AMS to grade it to bring more $ per lb.

Gene not sure what else you are eating if anything? that is a lot of protein and calories try adding more fats to your diet to fill you up and you shouldn’t need to eat 3 steaks a day. Sometimes we top our steaks with a garlic butter here is the recipe

One stick of butter softened
2 Tbsp chopped parsley
2 tsp minced garlic
1 tsp Worcestershire sauce
1/2 tsp salt
Combine ingredients well and chill until using
Put some of this on top of your steak when they are done

Or use butter (not margarine) on your vegetable - broccoli, cauliflower, green beans or Brussel sprouts

Slowly getting into this 'fasting' that seems to be working so well for some of you. By skipping breakfast the last two days, I am on an 18-6 ratio. I do ALL my eating from noon to six and fast the other 18 hours.

I have lost 3 pounds each day since I started so it must be working. Eventually I'm going to try to add another hour or two to my fasting and only eat from noon to four, but not ready to go that extreme yet.

I figured if I could quit smoking, I surely should be able to quit eating so much...right?

Are you eating more than steak? A lot of good recipes on Facebook. If you want to do some baking there are a lot of keto friendly desserts you can make and Lily brand chocolate bars are okay also Halo Top ice cream

You can make keto bread with almond or coconut flour but I don't make them as I don't miss bread. Maybe someone has a good recipe to share I think KimKyle posted one here

Ppl from work picked me up a delicious chicken roti for lunch so I had to oblige. Marks my 1st carb/processed/refined sugar meal since I started this. Kinda bummed. Just going to make this a cheat day I suppose and indulge in other no -no's and just fast for 24 hrs afterwards and hit the gym in the morning.

I don't think it is boring at all! We have a much larger variety in our diet now than before, as I am always experimenting and trying new things. There are some low carb breads out there. Frank has moved from Keto to low carb, and has sandwiches on the low carb pita bread most days for lunch.

You can do this, but make sure to get plenty of nutrients so you don't get yourself sick!

Well shit.

Ppl from work picked me up a delicious chicken roti for lunch so I had to oblige. Marks my 1st carb/processed/refined sugar meal since I started this. Kinda bummed. Just going to make this a cheat day I suppose and indulge in other no -no's and just fast for 24 hrs afterwards and hit the gym in the morning.

Arghhhh

It's all good! Everyday is a new day with this way of eating. When you go off the plan, just make damn sure you enjoy it!! Then hop right back on. Getting off from time to time is actually a good thing, as it keeps your body from becoming complacent! You got this.

Your food looks delicious Chris!

Last night we had shrimp scampi over cauliflower mash...no pictures but it was delicious!

After dinner we had a couple squares of chocolate. Go find these at your Walmart. $1.98 a bar and 4 net carbs for the whole thing.

Low carb Derek's been a good boy and I am down to173 when I came home from KC I was at 180

Only lost a few pounds of water weight after Kansas City then the rest was hard work will gain it all back over vacation tropical food is usually lighter and more greens and stuff so should be easier to stay away from a lot of carbs

I'm struggling, eating really good accept I can't kick this habit. I think I eat about 600-800 calories a day in nuts and or peanut butter. I'm craving it and I wish I would get sick of them. :( 8591

Thanks Chris, I definitely stay below 20 net carbs a day. I mostly eat unsalted pecans and unsalted walnuts mixed with sea salt mix nuts. And my peanut butter is dry organic peanuts and sea salt. My problem is too many calories. I rarely allow myself to buy macadamia nuts because I can't be trusted and those I will eat all by myself and in a day. LOL, I keep saying-tomorrow NO NUTS!
