You can split a good sized zucchini the long way and stuff it with a ground meat mixture and bake it, then top with cheese. Yum. You can do the same with spaghetti squash, but par cook the squash first.
I like the stuffed zucchini idea. I’ll try that for sure. Thanks!

Nothing to do with the zoodle topic, but -- if you like eggplant, you can adapt an old Julia Child recipe -- cube and season the eggplant, saute in olive oil, then just before serving sprinkle with ground pork rinds (instead of bread crumbs) mixed with your choice of herbs and lemon zest.

Somehow I escaped the Vegas Madness with less than a 1 pound gain! I had stopped posting food porn because I went Carb Crazy, so I really am fortunate. Back to it today.

I was afraid to weight myself! I went right back on and will weigh myself in about a week. I’m also trying to talk myself into adding the gym. No luck so far. My lazy boy is winning. Soooo comfy.

Not too pretty, but this is my version of the avocado chicken salad that @Georgiagambler posted awhile back. It was delish!

Gorgeous ham steak left from the ex-girlfriend. I’ll Miss her for many reasons!

Tenderloin with chimmichuri and roasted cauliflower and tomatoes

Again not too pretty but tasty pan roasted Brussels

One of my new faves. Greek lamb and cabbage topped with scallions, fresh parsley from my aero garden and feta. It was scrumptious!

Congrats @Elf70 for a great start.

Definitely take lots of electrolytes...they really help! I take a drink of
himalayan salt, pure synergy radiance C, and cream of tartar twice a day and I also take Magnesium L- Threonate. I will have a sip of dill pickle juice and some mustard on something throughout the day. No keto flu, no headaches. Also I take biotin I use to take Vital Proteins Collagen Pweptides for a few months. Now it's just biotin and I do bone broth when I make it. Taking supplements really helped so much. Good luck on your keto and I hope you are feeling better!!

I did my first egg fast and lost 5 lbs. *YAY* I came back from pigging and drinking out from New Orleans and wanted to get a jump start into weight loss and ketosis...vacationing and weight loss is soooo hard!! LOL
